Omelette And Cheese Sandwich..

Omelette & Cheese Sandwich.. From past 2 to 3days I'm only having omelette and cheese sandwich for the breakfast.. Actually this is routine in my house that we eat bread and omelette atleast 3 to 4 times in a week, sometime I feel bore and try new recipe in the same ingredients... This is one of the best recipe of normal bread and omelette to cheese and omelette sandwich. To cook this sandwich you don't need and fancy ingredients or appliances, you can cook just with few ingredients like (eggs, bread, cheese and onion) and it taste great with juice or a cup of hot tea... It can be served as a snacks too..


Ingredient's.
2 eggs
4 slices of bread
2tbsp cheese (you can use how much you want)
1 medium onion, 1 green chili (finely chopped)
Pinch of black pepper powder
1tsp oil
1tsp butter
Salt to taste.



Cooking Method.
In a large mixing bowl. add eggs, onion, green chili, black pepper and salt, mix them all together, and make omelette by using 1tsp oil.
In a mean time apply butter on to the bread slices and set it aside.


Once the omelette is cooked, take out on to a plate. Then on the same pan place the bread slices and sprinkle the cheese on top, now place half omelette on top of the bread and sprinkle some more cheese on top and cover it with another bread, and fry both the side until golden brown on a slow flame..
Repeat the same process for rest of the bread..
Serve hot with Juice or Tea.

Egg & Potato Masala Moong Dal.. (Pressure Cooker Version)

Egg & Potato Masala Moong Dal.. From past few weeks I'm feeling like to cook only that food which I use to eat before my marriage.. After my marriage my eating habit and food has changed completely. I use to be hardcore non-vegetarian I change my self to be just non-vegetarian.. I changed my cooking and eating habit just because of my hubby, because he don't prefer to eat non-veg that much and I don't wanted to eat alone. So instead of eating every day I made it to twice a month or sometime once in a week... Me being south Indian I love north Indian food from the beginning , I think for that only god gave me a my Husband :) I have just started cooking some selective food slowly and he is also eating. I'm sure if I cook south Indian food at least once in a week it is good for him to try out new dishes.. It is not like he don't eat completely, he eats some foods which favourite of all (Dosa, Idli, Sambar, Rasam etc) now enough of my story. Let me come to the recipe..


This masala moong dal with potato and egg is my family curry, we use to eat this most of the time for breakfast with hot roti's but I prefer with rice. So I use to save my dal for the lunch and then eat with rice.. Do try this unique combination to serve a different dish to your family member..


Ingredient's.
4 hard boiled eggs
2 medium potato (cut into big chunks)
1 cup split moong dal
1 medium onion, 2 green chilli, 1 large tomato (finely chopped)
1/2tsp turmeric, 1/2tsp coriander powder
1tsp ginger garlic paste
Hand full of chopped coriander leaves
Salt to taste.

For Tempering.
1/4tsp mustard seeds
10 curry leaves
3tbsp oil.



Cooking Method.
In a pressure cooker, add oil when it hot, add mustard seeds and curry leaves, when they splutter, add chopped onion and green chilli and fry them to golden brown.
Then add turmeric, coriander powder, ginger garlic paste and tomato, fry till oil start separating.
Now add moong dal. potato, coriander leaves and salt, give them good mix and add 2 cups of water, boiled eggs, again mix them and close the lid and cook for 2 whistle and allow them pressure to go completely before opening the pressure cooker..
Serve hot with Roti or Rice..

Banana & Dry Fruits Bread...

Banana & Dry Fruits Bread... Banana is a fruit which I can never say no and can eat as many as I can in a day. Most of the time I add banana in my baking and it always gives me best results. First I was thinking will just bake banana bread, then I ended up adding dry fruits because it is very healthy. I think adding banana to cake, bread or muffins is one of the best choice and it gives a very soft and fluffy texture. This bread can be served in Breakfast and in Tea time also. One of the best bread I have bake till now...


Prep time: 10 minutes
Baking time: 50 to 55 minutes
Yield: One loaf.

Ingredient's.
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking powder
1/4 cup mix dry fruits
Pinch of salt
1 1/2 cups of all-purpose flour.



Baking Method.
Preheat the oven to 350°F (175°C). Whisk in the butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking powder and salt over the mixture and mix.



Now add the flour, dry fruits and mix it nicely. Pour mixture into a buttered 4x8 inch loaf pan. Sprinkle some chopped almond from top and Bake for 55 minutes (mine was done in 50 minutes). Cool on a rack.
Remove from pan and slice to serve.

Breakfast Walnut Muffins..

Walnut Muffins!!! After getting my hand set on oven I just feeling like keep baking and baking.. I have tried many recipes in last 1 week which I will be posting it soon.. I'm trying to bake everything in a less quantity so that I get a change to bake more and was thinking that this muffins will go for 2days till then will think of some other recipes, but it just got over in a day.... Now again i'm in a same thinking processes:) Adding walnut to muffins or a cakes I just love it, they taste so good feels like having more then one.. Try these tasty muffins for breakfast with a hot cup of coffee or tea..



Yeilds: 8 to 9 medium Muffins
Preparation time: 10minutes
Baking time: 20 minutes.

Ingredient's
1/2+1/4 cup all purpose flour
1/4 cup butter
1tsp vanilla essence
1tsp baking powder
1/2 cup sugar
1 egg
1/3 cup milk
1/4 cup finely chopped walnuts.


Baking Method.
Preheat your oven to 350 degrees. Line muffins tin with liners and set aside.
In a small bowl, mix together the flour and baking powder, set aside. 
In a another mixing bowl, cream together the sugar and butter. Add the eggs, vanilla and cream together until you get a smooth mixture.
Add the dry ingredients and walnuts, mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! 
Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.



Scoop the batter into your lined muffins tin, make sure it's only filled ¾ of the way up because they will rise.
Then sprinkle some more walnut from top and Bake for 20 minutes and let cool for sometime.
Serve for Breakfast with your favourite drinks..

Lemon Zest And Vanilla Muffins...I baked this muffins on Monday just to get my hands on oven, because I have been always using OTG not oven and I was very scared to try also it took me a long time to start baking here... I have baked this muffins many times but I have not got the result as this muffins gave me, evenly raise and perfect colour. Now I know why people prefer Oven then OTG. I have made myself very clear once I go back to India (i don't know when will that happen) I'm going to buy a oven first... I started enjoying my baking again and very happy with results...


Yeilds: 8 to 9 medium Muffins
Preparation time: 10minutes
Baking time: 20 minutes.


Ingredient's.
1/2+1/4 cup all purpose flour
1/4 cup butter
1/3cup sugar 
1tsp vanilla essence
1tsp baking powder
1/3 cup milk

1egg.

Black Pepper And Egg Spicy Curry..

Black Pepper And Egg Spicy Curry!!! This is one of the very spicy curry and it goes very well with hot Rice... I wanted to eat this curry from last month, due to not having mixer grinder i use to postpond it. Last Saturday we order the mixer, after the mixer arrived, the first thing which i grinded was the Black Pepper Curry Masala and i was in so hurry to cook i dint even realize how much red chilli powder i have added. It was quite spicy but i really really enjoyed eating it and felt so satisfied... You don't have to make it spicy, this curry can be enjoyed less spicy too. Because i like spicy food so i always tried to cook this curry little spicy and tangy...
 
 
 
Ingredient's
3 large eggs
1 medium onion
2 green chili
2 large tomato
2tbsp chopped coriander leaves
1tbsp black peppercorns
1tsp ginger garlic paste
1tsp tamarind paste
1tsp red chili powder, 1/2tsp turmeric, 1/2tsp coriander powder
2 cup water
Salt to taste.
 
 
For Tempering.
3 dry red chili
8 curry leaves
1/4tsp mustard seeds
2tbsp oil.
 
 
 
Cooking Method
In a mixer jar, add tomato, onion, green chili, coriander leaves, black peppercorns, tamarind and ginger garlic paste. Grind it to smooth paste and set it aside.
In a deep fry pan, add oil, when oil is hot, add mustard seeds, dry red chili and curry leafs, when they splutter, add the ground masala and fry for 1 to 2minutes. Then add the red chili powder, turmeric and coriander powder, again fry for 2 to 3 minutes. Then add water and salt, give a quick stir and simmer the curry for 1 to 2 minutes on a high flame.
Now lower the flame and allow the curry to sit on flame for few second, then crack the 1egg at a time into a small bowl and slowly drop it to the curry side by side. Cover the lid and cook the curry for 2minutes on a low flame..
Serve hot with Plain Rice and Papad.

Shamrock Milk Shake Cup Cakes... The shamrock refers to the young sprigs of clover or trefoil. It is known as a symbol of Ireland, with St. Patrick having used it as a metaphor for the Christian Trinity, according to legend. Recipe adopted from Laura Vitale.
Makes-12
 
Ingredients
1 cup Granulated Sugar
1/4 cup of Unsalted Butter, softened at room Temperature
1/4 cup of Vegetable oil
2 Eggs
2tsp Vanilla
2 tsp of Baking Powder
1/8 tsp Salt
1 1/3 Cups All Purpose Flour
1/3 Cup Whole Milk.
 
 
For the Frosting
1 Stick of Unsalted Butter, softened
1/2 tsp of Mint Extract
4 cups of Confectioner Sugar
Pinch of green food color.
 
 
 
Baking Method
Preheat your oven to 350 degrees. Line your cupcake tin with liners and set aside.
In a small bowl, mix together the flour, salt, and baking powder, set aside.
In a mixing bowl, cream together the sugar, oil and butter. Add the eggs and vanilla, cream together until you get a smooth mixture. Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes before frosting.
 
 
To make the frosting combine together all the frosting ingredients and mix together to combine. Add the frosting in a piping bag fitted with a large star tip and pipe the frosting onto the cupcakes.

Choco Chip Muffins...

Choco Chip Muffins.. Nowadays Muffins are very famous in every Indian families, specially with kids... I prefer to make this kind of food at home only, because we know what ingredients we are adding and it is always a better option. Choco chip muffins are my favorite, i bake them very often and finished it in a 2 to 3days.. They go very well with hot cup of tea for breakfast.
 

 
Ingredient's
1/2+1/6 cups all-purpose flour
1tsp baking powder
1/3 cup milk
1tsp vanilla extract
1/4 cup butter
1/3 cup white sugar
1egg, room temperature
1/4 cup choco chips.
 
 
Baking Method
Preheat an oven to 350 degrees F (175 degrees C). Line 9 cup muffin pans with paper baking cups.
Stir together the flour, baking powder and choco chips in a large bowl, set it aside.
Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the egg and blend for another 1minute.
Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed. 

 
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes...
You can them in a air tight container for 2 to 3days.

Bread Pudding!!!

Bread Pudding.. Like every sunday, today also i woke up at 10am and made ginger tea. Then i woke my husband, with the tea and news paper... Before reading main news paper, i always read the Times Life first in Sunday edition. I was just reading and looking all those glossy pictures of beautiful homes. Then suddenly i saw a coloum about Terrance Lewis, Choreographer. It talked about his childhood days and his favorite cuisine etc. During his childhood days his mom use to bake bread pudding on every Sundays lunch, and this is his favorite pudding and he loves to eat every time.
 
 
The picture was looking so appealing and it tempted me to bake it right away... I have never baked a bread pudding before and this recipe was very simple and easy. With no preparation i baked this bread pudding as i had all the ingredients at home and that made my job easy and filled me with lot of joy after seeing the result.. Simple to bake and delicious to eat... Here goes the recipe.
 
 
Serves-3
Preparation Time-5 to 10 minutes
Baking Time-40 minutes
Ingredient's
4 slice of bread
1 cup milk
2 eggs
1/2tsp vanilla essence
1/2tsp cinnamon powder
3tbsp sugar
2tbsp raisins
1tbsp butter.
 
 
 
Baking Method
Pre-heat the oven to 175c.
Slice bread into small pieces (any shape you want) and place them into baking dish (I have used rectangular baking dish). Drizzle melted butter and some raisins over them.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon and vanilla. Beat until well mixed. Pour over bread, and lightly press down with a fork until the slices are completely covered and soaked in the egg mixture.
Bake in the preheated oven for 40 minutes, or until the top springs back when lightly tapped.
Serve Hot or Warm.
