Chicken Fajita Wrap/Mexican Style Wrap!!

Fajita is basically Mexican-style wraps. You can play with ingredients of your choice and can be made with left over vegetables or chicken. All you have do is just toss all the ingredients together and wrap with some tortillas and grill on a hot grilled pan or skillet. It make a great lunch or weekend dinner, in no time!! This was made with left over chicken I just added some veggies and fajitas seasoning and it was delicious. But I'm giving you the recipe of non cooked chicken, which I have tried several times!!



Ingredient's.
4 flour tortillas
1 cup of boneless chicken, diced
1 packet fajita seasoning
1 cup of chopped, green and red bell peppers
1/2 cup button mushroom, chopped
1 small onion, chopped
Pinch of pepper powder
Salt and Oil as per requires.


Cooking Method.
Heat the oil in a large frying pan over medium heat. add chicken and cook for 8 to 10 minutes. Then add mushroom, fajita seasoning and stirfry for 2 minutes. Now stir in the green bell peppers, red bell peppers, onion and pepper powder. Cook until the vegetables have softened, that will take about 4 to 5 minutes. and set it aside.
Mean time heat a grilled pan or skillet, onto medium heat with little oil. Then layer half of each tortilla with the chicken and vegetable mixture, then wrap the tortillas tightly and place onto a hot skillet and cook till it becomes a brown.
Serve with sour cream and salsa.

Veg Burger!!

Veg Burger!! Burgers are something which I can live on my whole life. Because they are small in potion and very filling. I have tried all kinds of burger and only veg burger was left, instead of eating in some eating joints, I tried my hands on veg burger at home and It was quite good and I discovered one more thing about me that I can't eat veg burger, but my hubby love it.. I can't say this is easy recipe but it's worth trying once. This burger has everything what you need for a day and it will keep you going without feeling hungry for a long time. I don't know about other but I was quite full for a very long time!!! You can even freeze the patties for a later and use when even you want. Do try and let me know..


Ingredient's For Arranging Burger
2 nos fresh Burger buns
4 lettuce leaves
2tbsp coleslaw
2 cheese slice (optional)


Ingredient's For ColeSlaw
1 cup of shredded cabbage
1/2 cup of grated carrot
1/2 cup mayonnaise
2tbsp fresh cream
Salt and Pepper to taste.


Ingredient's For Burger Patties.
1 cup boiled vegetables (green peas, potato, cauliflower, carrot)
1 small onion (chopped)
2 cloves of crushed garlic
1tbsp maida or corn flour
1/2tsp soya sauce
1/2tsp tomato sauce
1/2 chilli flakes
Pinch of black pepper powder
1/2 cup bread crumbs
3tbsp oil (to fry the patties)
Salt to taste.


Cooking Method.
In a mixing bowl add all the coleslaw ingredients and mix them well and refrigerate the coleslaw for a later use.
Heat oil in a frying pan and sauté onions, crushed garlic till onion turns transparent.
Now add all the boiled vegetables, soya and tomato sauce, chilli flakes, pepper powder and salt. Cook for a minute or 2. Switch off the flame & let it cool. Then add the maida and mash it really well and make a thick dough.
Roll the dough on the kitchen counter and make 4 even size patty and refrigerate for a 10 to 15minutes.
Dip the patty into bread crumbs and set a aside. In a mean time. heat a little oil in a frying pan to shallow fry the patties. Cook only in low flame till they turn golden brown in both the sides. Flip it whenever needed. Remove on to a kitchen towel. Repeat the same procedure to all the patties and keep all ready.

Method for Arranging Burger.
Cut the burger buns into 2 portions. Place the lettuce leaves on the 1 portion of bun, then keep one patty. above the patty put some coleslaw, slice of cheese and lettuce. Cover it with another portion of bun.
Adjust the quantity of patties and coleslaw as per your taste. You can also keep some tomato slices & if you desire.
Serve immediately with ketchup and chips!!

Brinjal Rice/ Vangi Bhath.

Brinjal Rice/ Vangi Bhath is a delicious one pot meal. It is a combination of eggplant and rice combined with indian spices!! and serve with coconut chutney. I still can't forget those days, when one of colleague use to bring vangi bhath for me in lunch when ever she cooks, atleast once in a month I use to get a call saying that don't bring lunch today, because I have cooked VB. She was an expert when it came to cooking this dish and I have tried eating in many South Indian restaurants but still I'm not able to get that taste. Anyway even I try my hands on to this dish when ever I get a chance. This dish can be made with even left over rice and serve with coconut chutney and papad, It's a wonderful combination.. I make vangi bhath masala at home, this time I have used a store bought masala, since the home made was over and I was craving to have this dish. What to do desperate times desperate measures!!


Ingredient's.
2 brinjal cut into cubes 
2 cups cooked rice
1/2cup peanuts
1 medium onion chopped
2tbsp vangi bhath masala
2 to 3tbsp tamrind extract
1tsp red chilli powder, 1/2tsp turmeric, 1tsp coriander powder
1/4tsp channa dal, 1/4tsp urad dal
1/4tsp mustard seeds
2 dry red chilli
Pinch of hing
10 to 15 curry leaves
Salt and Oil to taste.



Cooking Method.
Take a broad pan and heat oil. add channa dal, urad dal and peanuts, when they starts to turn brown, add dry red chilli, mustard seeds, curry leaves and hing, when they starts to splutter, add chopped onion and fry to golden brown. Then add red chilli powder, turmeric, coriander powder, vabgi bhath masala, tamarind extract and brinjals and cook till the brinjals are well cooked, that might take about 5 to 6 minutes, Now add the cooked rice and mix well. Vangi Baath is ready to serve.
Serve with Coconut Chutney and Papad.

Life Is Hard!!!

Life is real hard, one moment it gives you everything and the next it leaves you without anything! you will not have any idea what just happened. Life teaches you so many things which you have never dreamt of and it hard, in my case real hard. It has been a real long time I have blogged about something and I'm finding it so hard to start. After the two big incidents happened in my life, now life has no meaning for me and everything looks so empty and unreal. From 2013 I'm living the same life over and over with no difference at all. Each day and each month is same with so many memories! I wish I had a time machine to stop the time or go back to the old time.

Everybody says just move on and start thinking about new and start being happy but I don't understand how to start something new at the cost of the old memories. Those memories are unforgettable and I have lived the every moment of it and those feelings are just unforgettable. One day you have everything what you want and you do prepare many things to enjoy that moment which you are waiting from long time. And once you reach there and life start having some meaning and you start being busy and starts building up things what you have thought of! All of sudden you have nothing in your hands, everything again becomes empty and things starts haunting and there is only one person standing right behind you to hold you. It is so hard to answer peoples questions I just feel like hiding from everybody and never show them my face. But again I think what will happen to that person who is always there for me in any circumstances!

I'm trying real hard to get back to doing things what I use to do and feel good about it. I force myself to start everything back so that at least people around me feel normal. But every time I end up from where I started. I don't know where to go! If I go alone it's not fair for my husband even he is also in the same feelings what I'm in now. Though I have people around still my empty heart is not filling.. I keep fake smile on my face so that people around me should not feel my pain, but it is not fair. I'm not able to hide or show my pain and it is so difficult to face the world with the fake smile on my face. I feel so good to see when someone has a complete family, somewhere in the corner of my heart I feel bad for me and keep asking to god Why Me! Everyday I get up thinking that we will get what we deserve and keep waiting, but at the end of that day I'm standing in the same place surrounded by a same thoughts and feeling vulnerable. Nothing is changing everything is constant there is no movement at all. I know everybody has a problem in there life and many of them going through this pain, after thinking that also I'm not able to console myself and change my thoughts.. My heart and mind is filled with guilt and that guilt is killing me from inside and I'm not able to justify myself for what I have not done! I have no hope and I'm not able to see anything ahead, everything feels so painful and nothing feels right. The best part is I'm still living in my own virtual world where I have very happy family of my own.. I wish my virtual world would have been my real world! Now I have just given up, I know nothing is going to change I have to live with this pain through out my life. I just pray to god each and everyday no parents should go through this pain what we are going through, it is very painful!!

Mixology - Shake Shake Cocktail @DrinksOnMG!!!

Usual day started with a mix of emotions and had no clue how the rest of the day is going to shape up. After finishing work, checked my FB messages and there was a message from blogger friend 'VidyaLakshmi' who was kind enough to remember me to invite for Cocktail Masterclass hosted at #Drinks On MG by 'Nicholas Ord' & 'Alphonso Del Portillo' - winner of the 'India bartender of the year at Diago Reserve World Class 2015. It was a very good experience for me because I had been away from such events for a very long time. It felt like ages!!! Diago Reserve World Class was the perfect event to unwind myself.


Diago Reserve aims to transform fine drinking experience and cocktail culture around the world and in the home. It also offer platform for inspiring bartending talent who wants to make difference in mixology trend.



This event was hosted in celebration Alphonso incredible journey towards winning the 'India Bartender of the year'. #Drinks On MG was the perfect setting for the special masterclass where Alphonso showcased his winning concoctions - Atlantic Martini, & Botanical Heritage.


We reached there by early evening and it was good to meet few other bloggers friend over there. After a quick round of introduction, we all settled down eagerly waiting for event to start.It was quite an interactive session and lot of tips and tricks for making a cocktail. Alphonso set the mood for the evening with Atlantic Martini made with the Talisker, Tanqueray, No Ten, Orange, grapefruit powder and served in an elegant coupette.


Atlantic Martini was followed with another wonderful CIROC vodka cocktail- Botanical Heritage which was presented in chai tea clay pot. It was infused with green apples, tomatoes, basil, chardonnay syrup and a dash of Licorice syrup. I was very much impressed with the taste and flavours of this mixture. Definitely a winner to me.


The evening concluded with Golden Flip by Nicholas Ord. It was a delectably creamy and sweet creation, the rich mixture of Greek wildflower honey, tahini infused Johnnie Walker Gold Label Reseve, dash of apricot brandy and spritiz of orange zest.

Alphonso will now represent India and compete with the World's best bartenders at the Diago Reserve World Class Global Finals, to be held in Cape Town, South Africa, in September, 2015

#Drinks on MG is a good place to hangout with friends and enjoy the delicious food and awesome cocktails. I would definitely recommend this place!!!

Cheese & Chicken Quesadillas.

Cheese And Chicken Quesadillas is a great recipe for parties or picnic. The succulent chicken and cooked peppers are a delight when mixed with the melted cheeses. This recipe can be made even with leftover chicken or even mix vegetables and it can be pre prepared and freeze for a later use and they reheat quite well. Quesadilla taste better with sour cream and salsa.



Ingredient's.

Mean time heat a non-stick tava or frying pan onto medium heat with little oil. Then layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese. Fold the tortillas in half and Place onto a hot tava and cook both the side untill the cheese have melted.
Serve with sour cream and salsa.

Pasta Arrabiata.

Pasta Arrabiata is a spicy sauce for pasta made from garlic, tomatoes, and red chilli peppers cooked in olive oil. "Arrabbiata" means "angry" in Italian. Arrabiata sauce is usually accompanied with penne pasta and serve hot with Parmigiano cheese, but I have not added the cheese as I'm not a fan of cheese and I think it tasted better without cheese.. Try out the quick and easy dish and enjoy.



Ingredient's.
2tbsp extra-virgin olive oil
5 garlic clove, crushed
1tbsp red chilli flakes 
1 can of chopped tomato or 250gram chopped tomatos
1tsp dried oregano
Salt to taste
200g penne pasta.


Cooking Method.
Heat oil in a large saucepan over medium heat. Add garlic and chillies. cook for a minute. Then add tomatoes, oregano and salt. Bring to a gentle boil. Reduce heat to low and cook till all the tomatoes are nicely cooked. that would take about 15 to 20 minutes.


Meanwhile, cook pasta in a large saucepan of boiling, salted water following packet directions, until tender. Drain pasta and set it aside. Now add the pasta to sauce, toss to combine. Cover and set aside for 5 minutes (this allows pasta to absorb sauce).
Spoon into serving bowls and serve hot with some cheese.

Coconut and Dry Red Chilli Chutney.

Coconut chutney is a very easy and common side dish made in every South Indian households and served with idli, dosa, vadai and even with upma etc. The recipe is so simple and so easy and can be made in no time, there are many variation that can be made in a basic ingredients. Almost every chutney need tempering with mustard and curry leaves, but this recipe no need of any tempering it taste very good without even tempering and this chutney can be served with hot plain rice topped with ghee. Do try out this recipe and enjoy.


Ingredient's.
1 cup chopped coconut
10 dry red chilli
3 garlic cloves
5 to 6 curry leaves
1tsp tamarind paste
Salt to taste.


Method.
Dry roast all the above ingredients.
Then blend everything together with little water to a smooth paste.
Serve with idli, dosa.

Mix Vegetable Korma/ Coconut Base Vegetable Stew.

Mixed vegetable korma is a coconut based vegetable stew that is served as a side dish along with roti not only that, it goes well with one pot meals such as pulaos, biryanis and dosas as well. You can find this korma in almost all the vegetarian restaurants in India. There are several version of making veg or non-veg korma, but I find this is easy to cook as this requires no grinding of any masala. I have used coconut milk into this curry, you can even use freshly grated coconut to enhance the flavour. Do try this korma and enjoy with Paratha, Roti or Dosa.



Ingredients:
2 cups of chopped mix veggie's (carrot, cauliflower, potato, green peas, beans)
1 onion, 3 green chillies, thinly sliced
2tbsp tomato paste
1/2tsp turmeric, 1tsp coriander powder, 1/2tsp garam masala
1tsp ginger garlic paste
1/2tsp mustard seeds
1cup coconut milk
1 green cardomom
1 cinnamon stick
1 star anise
1 spring of curry leaves
2tbsp oil
Salt to taste.


Cooking Method.
Boil the veggies with bit of salt and set it aside. Heat a deep frying pan with oil. Add star anise, cinnamon, cardamom and sauté till the aroma arises. Now add mustard seeds, curry leaves and let it splutter.
Add onions, green chillies and sauté till the onions turns translucent. Now add tomato paste, ginger garlic paste, turmeric, coriander powder, garam masala, salt and mix well and fry for another 2 to 3 minutes.
Now add the coconut milk and enough water to the consistency you prefer the korma to be and mix well and cook over low flame. Let it come to a boil.
Add the par boiled vegetables, give it a quick stir, check the consistency of the korma now and add more water if necessary. Close the pan with a lid and cook over medium low flame for 7-10 mins.
Serve hot with Rice, chapathi, poori or parotta.

Egg Roll (Indian Street Food)

Egg roll is a very famous snack in India especially in Kolkata. This is quick and easy recipe saves a lot of time and gives you the fabulous experience of street food at home with lot of love and healthy touch. Even this rolls can be cooked with left over chapaties and can be deep fried to.. This is my favourite snacks when it is cooked at home :)


Ingredient's.
2 cooked roti's
2 Eggs
1 medium onions thinly sliced
1 small tomato thinly sliced
2 Green chillies finely chopped
1/4tsp pepper powder
1/2tsp lemon juice
Chaat Masala (optional)
Salt to taste
Oil for frying.



Cooking Method. 
In a mixing bowl beat an egg with a pinch of salt and pepper.
Heat oil in a pan and add the egg. Quickly place the cooked rotis on the wet egg mixture so that it sticks well. Keep dizzling oil and cook well on both sides.
In a mean while mix sliced onions,tomato, chillies and lime juice.
Place the egg paratha, ( egg side up) in a plate. Place the onion mixture in the centre, sprinkle a pinch of salt and chaat masala. 
Roll tightly and serve hot with Tomato Ketchup.

Rice Bhakri/ Akki Roti..

Rice Bhakri is very popular in coastal part of Maharashtra. It is made using rice flour and It goes really well with veg or non veg curries. I had a very bad experience making this bhakri first time, but I did not gave up, I kept trying and trying. Finally after 2 attempts they came out very well and tasted also very good with chicken and potato and green peas curry. 



Ingredient's.
1 cup rice flour
1 cup water
1/4 tsp salt.


Cooking Method.
Bring water to a rolling boil. Add salt and rice flour, mix well until no lumps remain. Turn the heat off. Knead the dough while still hot until it gathers into a soft pliable dough like a chapati dough.
Heat a tava on medium. Once heated, turn the heat to low.
Divide the dough into 2 inch balls and keep them covered under a damp cloth or a paper towel.
Spread some rice flour on the rolling board. Place a ball in the center and sprinkle more flour on top. Keep rolling the ball with the rolling pin into a thin circular disc of even thickness.
Transfer onto the heated tava with the top surface up and cook the bhakri both the side.
Follow rest of the method same as above.
Serve hot with any Sabji or Chicken, Mutton curry.
