Doughnuts.

Finally, I'm posting one of my favourite recipe after waiting for like ages. Doughnuts are my most favourite and I love to have them anytime of the day. This is a very simple and easy recipe which can be made easily by the beginners also. I have tried this recipe like a hundred times and everytime I got the best doughnuts...



Ingredient's.
1+1/4 cup of all purpose flour, plus a bit more for dough
1/2tsp yeast
1/8cup sugar
1/4+1/8cup Luke warm water or milk (115c)
1/4cup melted butter
1tsp vanilla essence
1 egg
Oil for deep frying.

Ingredient's For The Glaze.
1/2 cup icing sugar
1/2 tsp vanilla essence
Milk, as needed (about a 2tsp of milk)



Cooking Method.
In a small bowl, combine the warm milk and 1tsp sugar, sprinkle the yeast over the top and let it sit for about 5 minutes.
In the bowl mix the egg, milk, sugar, vanilla, melted butter and sugar. Mix till the sugar is dissolve. Then add flour, yeast water and mix. Knead the dough for 5 to 7 minutes or until you have a smooth dough. Cover the dough with plastic wrap and place it in a warm spot to rise for about 2 hours.
When the dough is doubled in size, punch the dough down and roll it out onto a floured surface into 1/2 inch thickness. Using a doughnut cutter, cut out the doughnuts and place them on a counter top and cover them with a kitchen towel and allow them to raise for another 15 to 20 minutes. In a mean time heat a oil in a deep frying pan, once the oil is hot lower the heat.
Now fry the doughnuts to golden brown on a medium flame. Then allow the doughnuts to cool completely before icing.
In a large mixing bowl, mix the icing sugar, vanilla essence and milk. mix everything until you get a consistency runny enough to dip the doughnut in.
Take the completely cooled doughnuts and dip into a glaze and place them on the cooling rack to set. 
You can glaze as you like and decorate the doughnuts as your wish.

Cranberry And Chocolate Cake Loaf!!

Cranberry And Chocolate Cake Loaf!! This is one my best cake, which I can make even closing my eyes and eat even in the mid night without think about the calories. This taste awesome with vanilla ice cream topped with some chopped salted peanuts..



Ingredient's.
1+1/2 cup all purpose flour
1+1/2 cup sugar
3/4 cup cocoa powder
1/2 tbsp baking soda
3/4 tsp baking powder
1 tsp salt
2 large eggs
3/4 cup butter milk
3/4 cup warm water
1/4 cup cooking oil
1 tsp vanilla essence
1 cup dried or fresh cranberry. (Buy Here -> Cranberry Whole 250g)

Baking Method.
Preheat oven to 180 degrees C. Butter the baking pan and keep it aside.
Stir together the flour, baking powder, baking soda, cocoa powder, salt in a large bowl, set it aside.
Beat the oil and sugar with an electric mixer in a large bowl for few minutes. The mixture should be noticeably lighter in color. Add the egg and blend for another minute or 2, add the vanilla essence and warm water and give a quick mix.
Now add the dry ingredients and with the speed on low mix together and slowly add the butter milk and just mix everything to combine, making sure not to over mix. Then add the cranberry and mix everything well.
Pour the batter into buttered pan and bake for 30 to 35minutes. Allow it cool before taking out from the pan. Then sprinkle the icing sugar on top and Then cut them into slices and serve with whipped cream or ice cream. 
Serve with Tea or Coffee.

Chocolate Coated Pistachio Biscotti With Pistachio Dust!

Chocolate Coated Pistachio Biscotti With Pistachio Dust! These are my all time favourite biscotti to bake with, they are easy and last long. Make a big batch of them and store in a airtight container and your evening snacks problem is solved. Its home made, healthy and yummy snack to have anytime of the day.



Ingredient's.
2 cups of plain flour
2 large eggs
1/2 cup butter
1 cup sugar
1tsp baking powder
1tsp vanilla essence
3/4 cup Pistachio.

For Decorating.
1/2 cup melted dark chocolate
1/4 cup pistachio (grind into a course powder).



Baking Method.
Pre-heat the oven 180c for 10 minutes.
In a mixing bowl add flour and baking powder and mix them nicely. roughly chop the pistachio and mix it with flour and set it aside.
In a large mixing bowl, add butter and sugar beat until light and fluffy.
Add the eggs, vanilla essence and beat for another 2 to 3 minutes
Then mix in the dry ingredients and beat until the dry ingredients are well mixed.
On a lightly floured surface roll dough into a log about 14 inches long and 3-4 inches wide. Transfer to baking tray and bake for 35-40 mins.
Remove from the oven and cool on a wire rack for 10 mins.
Then cut into slices 1/2 inch thick diagonally and arrange evenly on baking tray. Bake for 10 mins on each side (until they are firm). Remove from oven and cool.
Once they are well cooled. dip the biscotti into a melted chocolate and sprinkle the pistachio dust on top and allow them to dry for 20 to 30 minutes. 
Store them into airtight container.

Stuffed Omelette With Caramelised Onion. This is a very easy stuffed omelette with well caramelised onion, with a hint of paprika and green chillies.. It makes an a awesome breakfast on a lazy weekends or even as a brunch. All you need is just few onion and eggs, that's it and your breakfast is shorted. It's been a long time I have participating in any competitions. All of sudden 3 days back I saw Better Butter Contest on my FB page which includes eggs and eggs are there in our breakfast almost everyday, so I thought why not give it a try. Just because of the contest I'm clicking pictures early mornings, making my hubby to wait on table for his breakfast, so that I don't become lazy and finish the food. Now he is like you have win this because you are making me wait for so long.. The funny thing is my hubby said if at all you win the contest, then take the 3rd price. Because he like the teapot.. hehehe. Anyways lets see what happens.. Do try the recipe and let me know.



Ingredient's.
4 eggs
3 large onion (thinly sliced)
2 green chillies (finely chopped)
1/8 tsp paprika
1/4 tsp ground black pepper
1/8 tsp Italian mix herbs
Pinch of red chilli flakes
Salt to taste
Oil as requires.



Cooking Method.
In a small mixing bowl, whisk the 2 eggs with a pinch of salt and set it aside.
In a nonstick frying pan, add little oil, saute the onion for few seconds, then add rest of the ingredients and fry till onions are well caramelised, then remove from the and set it aside.
Now in the same frying pan add little more oil and allow the oil to heat, pour the egg mixture on to the frying pan and cook on over medium heat. As the eggs sets on top lift the edges, letting the uncooked eggs to flow underneath. when eggs are set, add the half of the onion mixture to the omelette on one side and roll the otherside on top and cook for another minute, on a low flame.
Then take out the omelette on to a serving plate.
Serve hot with some Toast.
(Make 2 eggs at a time and divide the onion into 2 portion)


Egg Roast (Kerala Style)

Egg Roast (Kerala Style) from our recent trip to Kerala, my hubby developed a new taste of coconut oil. Now all he wants is coconut oil in everything. I should thanks to our houseboat chef because he was cooking everything in coconut oil and that smell use to make us hungry like anything and all we only did was eating and eating. While coming back I bought few bottles of coconut oil and earthen cooking pots and believe me I'm also enjoying cooking in my new pots.. I have many more Kerala style recipes on the way.. I had even cooked this egg roast in a normal cooking oil and in kadai, that also taste good but this was exceptionally tasty. Do try this dish and let me know!!



Ingredient's.
4 hard boiled eggs 
2 medium onion, 1 large tomato (finely chopped)
3 to 4 green chilli's slit
1 tsp red chilli powder, 1/2 tsp turmeric
1/2 tsp coriander powder, 1/2 tsp garam masala
1/2 tsp mustard seeds
2 tsp lemon juice
1 tsp ginger garlic paste
10 curry leaves
2 tbsp fresh grated coconut
1/2 tsp ground black pepper
2 tbsp chopped coriander leaves
Salt to taste
3 tbsp coconut oil.



Cooking Method.
In a deep earthen pot, add coconut oil, when oil is hot, add curry leaves and mustard seeds, when they splutter, add onion, green chilli and fry to lite brown.
Add grated coconut, red chilli powder, turmeric, coriander powder, garam masala and ginger garlic paste and fry for 1 minute. Then add chopped tomato's, lemon juice, salt and cook till the tomatoes are well cooked. Then add black and eggs, add little water if needed. Now cover the lid and cook for 4 to 5 minutes on a low flame. After 5 minutes take the lid of and roast the eggs on to high flame for a minute.
Garnish with coriander leaves.
Serve hot with Roti's, Naan, or Rice.

Chocolate Chip Cookies.

Chocolate Chip Cookies. These crispy from outside and chewy from inside cookies are my all time favourite at anytime of the day with cold glass of milk. I have been following this cookies recipe from many years and I bake many types of cookies with a small changes here and there, I just change the flavouring or few ingredients and I always get a best cookies.. Do try my recipe and let me know. Even you can play with ingredients of your choice.



Ingredient's.
1+1/4 cup all purpose flour
1 cup sugar
1/2 cup butter
1/2 tsp baking soda
1 egg
1 tsp vanilla essence
1/2 cup choco chips.


Baking Method.
Pre-heat the oven at 180c for 10 minutes.
Cream together butter, sugar until smooth, then add egg and vanilla, beat for another 40 to 50 seconds.
Then stir in the flour, baking powder and choco chips, then foam a dough. Make a lemon size balls and place it on a greased baking tray and refrigerate for atleast 30 minutes. Take them out after 30 minutes. Now baking them at 175c for 11 to 12 minutes or until the edges are golden brown.
Store them into a airtight container.
Serve them with cold glass of milk.
(NOTE: Refrigerate is must because it gives the evenly baked cookies)

Carrot Cake With Walnuts. (Butterless Sugarless)

Carrot Cake With Walnuts is an a awesome cake with little hint of nutmeg and cinnamon and it taste very good and lite. Using vegetable oil makes this cake very light and fluffy. Usually its icing with cream cheese, since I was out of cream cheese so I did with icing sugar glaze and it was not a bad decision.. It looked as beautiful and tasted as it suppose to be.. Since it's less calories and you don't have to worry after eating a piece and there is no compromise on the taste.. Try this recipe you'll love it..


Ingredient's.
3/4 cup honey (if no honey use 1 cup sugar)
1/2+1/4 cup vegetable oil
1+1/4 cup plain flour
1 egg
1/4 cup curd
1+1/2 cup shredded carrot
1/2tsp cinnamon powder
1/4tsp nutmeg powder
1/2+1/8 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped walnuts.


Ingredients For Glaze.
1/2 cup icing sugar
2 tbsp milk.

Baking Method.
Pre-heat the oven at 180c for 10 minutes.
In a mixing bowl. beat the oil, honey, curd and egg together for 2 to 3 minutes or till fluffy
In another bowl mix the all purpose flour, baking powder, baking soda, salt, nutmeg and cinnamon
Then add the shredded carrot and dry ingredients to the wet mixture and beat for another 1 to 2 minutes. Now add the walnuts and give a quick mix. Then transfer the batter to the non-stick round baking tray and bake for 35 to 40 minutes.
Then cool completely on a wire wrack.
Mix the icing sugar and milk together to a pouring consistency. Then pour the glaze on the cooled cake and Serve.

Choco Walnut Brownie!!

Choco Walnut Brownie. This is a awesome fuggy and chocolatey brownie which can be made in just 25 to 30 minutes. I have baked brownie many times but this was the best brownie so far and I have taken this recipe from JoyofBaking. With a little changes I think I have mastered this recipe.


Ingredient's.
3/4 cup chocolate
1/2 cup butter
3 tbsp cocoa powder
1 cup sugar
1 tsp vanilla extract
3 eggs
3/4 cup all-purpose flour
1/2 cup chopped walnuts.



Baking Method.
Preheat oven to 180c and place the rack in the center of the oven. Butter a 8 inch square pan, and line the bottom of the pan with parchment or wax paper.
Melt the chocolate and butter in a large stainless steel bowl placed over a saucepan of simmering water. Remove from heat and stir in the cocoa powder and sugar . Next, whisk in the vanilla extract and eggs, one at a time, beating well after each addition. Finally, stir in the flour.
Then pour into the prepared pan and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out with a little batter and a few moist clumps clinging to it. Remove from oven and let cool on a wire rack. Serve at room temperature or Chilled with Ice Cream.

Egg Roll (Indian Street Food)

Egg roll is a very famous snack in India especially in Kolkata. This is quick and easy recipe saves a lot of time and gives you the fabulous experience of street food at home with lot of love and healthy touch. Even this rolls can be cooked with left over chapaties and can be deep fried to.. This is my favourite snacks when it is cooked at home :)


Ingredient's.
2 cooked roti's
2 Eggs
1 medium onions thinly sliced
1 small tomato thinly sliced
2 Green chillies finely chopped
1/4tsp pepper powder
1/2tsp lemon juice
Chaat Masala (optional)
Salt to taste
Oil for frying.



Cooking Method. 
In a mixing bowl beat an egg with a pinch of salt and pepper.
Heat oil in a pan and add the egg. Quickly place the cooked rotis on the wet egg mixture so that it sticks well. Keep dizzling oil and cook well on both sides.
In a mean while mix sliced onions,tomato, chillies and lime juice.
Place the egg paratha, ( egg side up) in a plate. Place the onion mixture in the centre, sprinkle a pinch of salt and chaat masala. 
Roll tightly and serve hot with Tomato Ketchup.

Cinnamon & Dried Plums Breakfast Muffins.

Cinnamon & Dried Plums Breakfast Muffins. This is best muffins to have for breakfast with a glass milk to start a day with lots of energy, since it has all the goodness of dried plums, butter, milk etc. I'm a huge fan of muffins and I really enjoy baking them more then a cake and I bake them quite often with different ingredients. This is a full proof recipe which I follow every time and I always get a best result. Do bake and enjoy..



Yeilds: 9 medium Muffins
Preparation time: 10minutes
Baking time: 20 minutes.

Ingredient's
1/2+1/4 cup all purpose flour
1/4 cup butter
1tsp vanilla essence
1tsp baking powder
1/3 cup sugar
1tsp cinnamon powder
1 egg
1/3 cup milk
1 cup mix dried plums.



Baking Method.
Preheat your oven to 350 degrees. Line muffins tin with liners and set aside.
In a small bowl, mix together the flour and baking powder and cinnamon powder. set aside. 
In a another mixing bowl, cream together the sugar and butter. Add the eggs, vanilla and cream together until you get a smooth mixture.
Add the dry ingredients and dried plums, mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! 
Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.
Scoop the batter into your lined muffins tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for sometime.
Serve for Breakfast with your favourite drinks.
Store them in a airtight container.

Spicy Madras Egg Curry.(Pressure Cooker Version)

Spicy Madras Egg Curry. Here in Britain, Madras curries are so common that you'll find in each and every Indian restaurant. According to the local people it is very hot and spicy, but for me it was very bland and after trying in few restaurant I was so much in mood to cook my own version of spicy madras curries. I have tried in chicken, mutton and egg too, but this is the curry most loved by my husband. I have tried making the madras curry masala at home and it taste better then the store bought one and will be posting the recipe for masala also in next post. This gravy taste better if it is little thin but you can make gravy according to your choice thin or thick. Do try this spicy curry at home and enjoy with your family.


Ingredient's.
4 hard boiled eggs
2 medium size onion, 2 green chilly, 2 medium size tomato (finely chopped)
1tsp madras curry masala
1/2tsp turmeric, 1tsp coriander powder
1tsp red chilly powder, 1tsp garam masala
1tbsp ginger garlic paste
1/2tsp cumin seeds
2 bay leaves
2 dry red chillies
1tsp kasoori meethi
3tbsp oil + 1tbsp for frying eggs
Salt as per taste.



Cooking Method.
In a non-stick pan, add 1tbsp oil and fry the eggs to golden brown and keep it aside.
In a pressure cooker add oil, cumin, bay leaves, dry red chillies, when they splutter, add onion and chilly fry till it become’s golden brown, add all the masala powder and ½ cup water, fry till it starts leaving oil, add tomato and cook till all the masala has come together, that will take about 5 to 6 minutes.
Then add fried eggs, kasoori meethi, salt and mix. Add another 2cups of water, cover the lid and cook for 2 whistle (1 in high flame and 2 in low flame). Allow the pressure to go completely before you open the cooker.
Garnish with coriander leafs
Serve with Ghee Rice, Plain Rice or Jeera Rice and Roti.
