Plum Cake.. Merry Christmas 2013.

Plum Cake - I had got all the ingredient's well before 1 week and had kept on kitchen slab last night to make sure that I don't forget to bake it today morning. It was a long pending ToDo in my list during X'mas and due to one or the other reason it was always missed... Whole night I was dreaming about the cake only and could not sleep for a very long time.As soon as I woke up, ran to kitchen and started baking the cake so that I can take the picture when the sun is still bright(Sun light always brings best pictures). If I would have got late then I would have not got so good pictures.. Here the sun is so unpredictable and I don't get enough time to relax and do the work. That is the main reason I have to finish my blog work before noon. Any ways all this part of life I am learning to go with flow.. Merry Christmas to everyone enjoy your day to the fullest...

Ingredient's.
3/4 cup all purpose flour
2+1/2tbsp cocoa powder
1tsp baking powder

1/2 cup butter
2 eggs
1/2 cup sugar
1tsp vanilla essence

1 cup mix berry's, nuts and tutti frutti.

Instant Wheat Dosa..

Instant Wheat Dosa.. This is a very easy and healthy dosa prepared with just few ingredients (wheat flour, rice flour, curd and salt) and this is one of the healthy way to start your day or even when you have very less time to cook something healthy and delicious, then this is the best option.. There are many ways you can cook this wheat flour dosa, but I like this one because it looks neat like a normal dosa. or else wheat flour dosa usually looks very messy. This dosa batter is bit thick compare to the usual wheat dosa batter and it works very well on pan and keeps the kitchen clean. That is the most important thing I want in my kitchen.. Can change or add more ingredients according to your taste...

Ingredient's.
1 cup whole wheat flour
1/4 cup rice flour
1/2 cup curd or butter milk
1tbsp butter
1 cup water to make a dosa batter (you can even add more water if needed)
Salt to taste
Oil for applying on pan.

Cooking Method.
In a large mixing bowl, add both the flour and butter, mix it nicely.
Then add curd, salt and water, make a batter( batter should be the same consistency like normal dosa batter) and keep it aside for 2 to 3 minutes.

Now heat a tawa, once the tawa is heated, reduce the heat to medium, pour a ladle of batter and make round shape dosa and pour little oil from top and cook till crispy on the edges.. Repeat the same process for rest of the batter.
Serve immediately with Coconut or Peanuts chutney..

Gatte Ki Sabji (Gram Flour & Curd Curry)

Gatte ki sabji is a popular and all-time favorite marwari recipe with besan based steamed dumplings simmered in buttermilk laden tangy gravy. I had never heard of this sabji nor tasted, few days back i was watching a TV show called Chak Le India on NDTV Goodtimes. There he was showing all marwari dishes in that i liked only gatte ki sabji, because it was sounding very different and very tasty too. On the same day i tried making this gatte ki sabji and it was very tasty with rice and i love it...

Ingredients-For Gatte
1 cup Besan (Gram flour)
1 pinch red chilly powder
1 pinch turmeric powder
2 tsp curd
cumin seeds
coriander leaves
2 tsp oil and salt to taste

Ingredient's-For Curry
2 cup of buttermilk
1onion, 2 green chilly (finely chopped)
5 to 10 curry leaves
2 dry red chilly
1 tsp mustard seeds
1-2 cloves
1 tsp turmeric powder, 2 tsp red chilly powder
1tsp ginger garlic paste
4-5 tsp oil and salt to taste

Cooking Method
In a mixing bowl add besan, cumin seeds, oil, curd, salt, chilly & turmeric powder in to it & make a thick dough (if needed add little amount of water )
Divide the dough in to 3-4 pieces.
Roll every piece & cut them in to small capsule like pieces. (these are the Gatte)
Now add these gatte in to the boiled water & allow them to boil up to 10-12min (when gatte boiled properly they will appear on a surface of water)remove the water from boiled gatte & keep then aside.

Heat a deep frying pan add oil, when the oil is hot add dry red chilly, curry leafs, mustard seeds and cloves, when they splutter, add chopped onion and green chilly and fry to golden brown.
Then add turmeric and red chilly powder and fry for another 1 to 2 minutes. Then add buttermilk and mix it well, now add the prepared gatte and salt and cook for 4 to 5minutes in a low flame.
Serve hot with Roti or Rice.. I prefer with Rice.

Paneer Butter Masala

I can eat Paneer Butter Masala almost every day, but this saturday, our cravings were at a peak-time high as there was light rain outside. Everyone knows I just love Paneer Recipes, and this weekend I decided to make the eternal favorite Paneer Butter Masala, that velvetty-smooth gravy that has all the goodness of indian spices combined with cubes of cottage cheese and garnished with cream and coriander
Paneer Butter Masala is similar to other paneer gravies, except that as the name implies, it is more rich due to butter and the gravy is thickened by using onions, tomatoes and cashew paste rather than just cream. You cannot go wrong with this, try and see the results:)

Ingredients:
125 grams paneer
1 tomato (grind to a fine paste)
2 onions (grind to fine paste)
1 tsp Cumin Powder
1 tsp Dhania Powder (coriander powder)
1 tsp ginger garlic paste
3 cloves
2 tsp cashews paste
1 Cinnamon stick
1/2 tsp Garam masala powder
1/4 tsp chilli powder
3 Tsp Yogurt
Coriander leaves
4-5 tsp butter
Salt to taste

Cooking Method:
Grind cloves, cinnamon to fine powder
Heat oil, fry few paneer cubes on medium heat until golden brown. Set the paneer pieces aside.
Grate remaining paneer and keep it aside
Heat oil or butter, fry onions, ginger garlic paste, for 3 minutes.
Add tomato paste and simmer for 5 minutes.
Add cashews paste, Dhania powder, Cumin powder, garam masala powder, salt, chilli powder, extra butter and masala powder from step 1.
Add yogurt and stir until gravy becomes thick. Add fried paneer cubes, grated paneer add 1/2 -1 cup water and simmer for 5 minutes , until all the flavour is absorbed into paneer.
Serve hot garnished with coriander leaves.
