Doughnuts.

Finally, I'm posting one of my favourite recipe after waiting for like ages. Doughnuts are my most favourite and I love to have them anytime of the day. This is a very simple and easy recipe which can be made easily by the beginners also. I have tried this recipe like a hundred times and everytime I got the best doughnuts...



Ingredient's.
1+1/4 cup of all purpose flour, plus a bit more for dough
1/2tsp yeast
1/8cup sugar
1/4+1/8cup Luke warm water or milk (115c)
1/4cup melted butter
1tsp vanilla essence
1 egg
Oil for deep frying.

Ingredient's For The Glaze.
1/2 cup icing sugar
1/2 tsp vanilla essence
Milk, as needed (about a 2tsp of milk)



Cooking Method.
In a small bowl, combine the warm milk and 1tsp sugar, sprinkle the yeast over the top and let it sit for about 5 minutes.
In the bowl mix the egg, milk, sugar, vanilla, melted butter and sugar. Mix till the sugar is dissolve. Then add flour, yeast water and mix. Knead the dough for 5 to 7 minutes or until you have a smooth dough. Cover the dough with plastic wrap and place it in a warm spot to rise for about 2 hours.
When the dough is doubled in size, punch the dough down and roll it out onto a floured surface into 1/2 inch thickness. Using a doughnut cutter, cut out the doughnuts and place them on a counter top and cover them with a kitchen towel and allow them to raise for another 15 to 20 minutes. In a mean time heat a oil in a deep frying pan, once the oil is hot lower the heat.
Now fry the doughnuts to golden brown on a medium flame. Then allow the doughnuts to cool completely before icing.
In a large mixing bowl, mix the icing sugar, vanilla essence and milk. mix everything until you get a consistency runny enough to dip the doughnut in.
Take the completely cooled doughnuts and dip into a glaze and place them on the cooling rack to set. 
You can glaze as you like and decorate the doughnuts as your wish.

Choco Walnut Cake!!

Choco Walnut Cake and Happy New Year 2017. Let's welcome the new year with a sweet note and put the past behind and look forward for the new beginning.. New year always brings the new thoughts and new things into our life, which gives a chance for everyone to make a new mistakes and wait for the next year to make a new resolution and break it again. hehehe😂. Anyways these things happens in life and I think everyday is a new year if you live your life to the fullest..


Ingredient's.
1+1/2 cup all purpose flour
1+1/2 cup sugar
3/4 cup cocoa powder
1/2 tbsp baking soda
3/4 tsp baking powder
1 tsp salt
2 large eggs
3/4 cup butter milk
3/4 cup warm water
1/4 cup cooking oil
1 tsp vanilla essence
1 cup chopped walnuts.



Baking Method.
Preheat oven to 180 degrees C. Butter the baking pan and keep it aside.
Stir together the flour, baking powder, baking soda, cocoa powder, salt in a large bowl, set it aside.
Beat the oil and sugar with an electric mixer in a large bowl for few minutes. The mixture should be noticeably lighter in color. Add the egg and blend for another minute or 2, add the vanilla essence and warm water and give a quick mix.
Now add the dry ingredients and with the speed on low mix together and slowly add the butter milk and just mix everything to combine, making sure not to over mix. Then add the 1/2 cup of chopped walnuts and mix everything well.
Pour the batter into buttered pan and sprinkle the left over chopped walnuts and bake for 30 to 35minutes. Allow it cool before taking out from the pan. You can ice the cake with whipped cream or chocolate ganache. or as you like. 
Serve with Tea or Coffee.

Chilli Cheese Toast With Avocado!

Chilli Cheese Toast With Avocado! Easy beezy breakfast on busy weekdays or weekends. Paired with milkshake or juice makes a very healthy and filling dish.



Ingredients.
4 slices of bread (white or brown)
2 tbsp pizza sauce
1 medium onion, 1 medium tomato. 1 small capsicum (Finely chopped)
1/2 ripped avocado
1/2 cup shredded mozzarella cheese
Pinch of black pepper powder
Salt to taste.


Cooking Method.
Pre-heat the oven at 180c for 10 minutes.
Apply pizza sauce on the bread on one side. Then arrange the chopped onion, capsicum and tomatoes. Sprinkle some salt and pepper. Then sprinkle the cheese on all the bread.
Grill the bread till the cheese is melted.
Now arrange the avocado slices on top of the grilled toast and sprinkle some more salt and pepper.
Serve hot with tomato ketchup.

Stuffed Omelette With Caramelised Onion. This is a very easy stuffed omelette with well caramelised onion, with a hint of paprika and green chillies.. It makes an a awesome breakfast on a lazy weekends or even as a brunch. All you need is just few onion and eggs, that's it and your breakfast is shorted. It's been a long time I have participating in any competitions. All of sudden 3 days back I saw Better Butter Contest on my FB page which includes eggs and eggs are there in our breakfast almost everyday, so I thought why not give it a try. Just because of the contest I'm clicking pictures early mornings, making my hubby to wait on table for his breakfast, so that I don't become lazy and finish the food. Now he is like you have win this because you are making me wait for so long.. The funny thing is my hubby said if at all you win the contest, then take the 3rd price. Because he like the teapot.. hehehe. Anyways lets see what happens.. Do try the recipe and let me know.



Ingredient's.
4 eggs
3 large onion (thinly sliced)
2 green chillies (finely chopped)
1/8 tsp paprika
1/4 tsp ground black pepper
1/8 tsp Italian mix herbs
Pinch of red chilli flakes
Salt to taste
Oil as requires.



Cooking Method.
In a small mixing bowl, whisk the 2 eggs with a pinch of salt and set it aside.
In a nonstick frying pan, add little oil, saute the onion for few seconds, then add rest of the ingredients and fry till onions are well caramelised, then remove from the and set it aside.
Now in the same frying pan add little more oil and allow the oil to heat, pour the egg mixture on to the frying pan and cook on over medium heat. As the eggs sets on top lift the edges, letting the uncooked eggs to flow underneath. when eggs are set, add the half of the onion mixture to the omelette on one side and roll the otherside on top and cook for another minute, on a low flame.
Then take out the omelette on to a serving plate.
Serve hot with some Toast.
(Make 2 eggs at a time and divide the onion into 2 portion)

American Apple Pie...



Ingredient's
1 1/2 cups of flour
1/2 teaspoon of salt
3/4 of a stick or 90 g of unsalted butter
5 tablespoons of cold water or apple cider
1 egg (for brushing, helps the surface get golden)
Milk (for brushing, optional)

Filling
1 tablespoons lemon juice
80 mL or 1/3 cup of white sugar
80 mL or 1/3 cup of brown sugar
1/4 teaspoon of salt
3 tablespoons of flour
1/2 tsp cinnamon powder
2 medium-sized apples
Preheat the oven to 400ºF (200ºC).

How to Bake Pie

Make sure you have a clean, spacious countertop available for kneading and rolling out the dough.
Place the flour, salt, and butter in a large bowl. With a pastry blender or fork, smash up the butter until it forms tiny balls with the flour. Then slowly add the water.


Knead with floured hands until a large dough ball forms. Split the ball in half and wrap one of the piece in plastic wrap. Place the wrapped dough in the refrigerator. An alternative is to wrap both of the dough balls and refrigerate them for 30 minutes before proceeding to the next step.


On a floured counter-top, begin to roll the dough out into a circle shape about 2 inches larger in diameter than the pie pan. Some people prefer to place a layer of plastic wrap on top of the dough as it's being rolled so that it doesn't stick to the rolling pin.


Slowly lift the flattened dough off the counter-top by wrapping it completely around the rolling pin.
Unroll the dough over the pan, being careful not to let it tear. Fit it into the pan, pressing it against all the sides.
Cut off the overhanging edges. Leave about 1/4 inch of extra dough over the pie pan. Place the pie shell in the refrigerator.


Make the filling. Peel and slice the apples into pieces about 1/8 of an inch thick or chop them into 1/2" cubes. Put them into a large bowl and mix with sugars (white and brown), salt, lemon juice, flour, and cinnamon (shake over to cover the top of mixture). Place in refrigerator.


Roll out the remaining ball of dough on a floured surface, just like you did before. Sliced top. Gently fold it in half and make 4 to 5 half inch long slices along the fold and 4 slices in the center of the folded piece. These will allow the filling to breath and not break through the sides. Unfold the top crust set it aside. 
Lattice top. Cut the rolled out dough into as many 1" wide strips as it will yield.


Remove the pie shell and filling from the refrigerator.
Pour the filling into the pie shell, spreading it out with the back of a spoon. There should be enough filling to fill the entire pan and stack up above the edge at least an inch in the center.
Brush the edges of the pie shell with a beaten egg.


Lay the sliced top crust over filling. Cut off the excess edges with a butter knife. Take both thumbs facing each other and place them over the edge. Push thumbs down and towards each other. Do this around the entire pie to seal it.

Place the pastry strips across the top of the apples in a criss-cross pattern, then weave them together to create a lattice effect. Cut off the overhanging excess pastry and press the edges down into the rim as previously described. Sprinkle milk over the top or brush the lattice with the egg wash. This will help to brown the crust. Dust cinnamon and sugar over the top crust for an extra touch.
Bake at 400ºF (200ºC) for 15 minutes. Turn down the oven to 375ºF (190ºC) for 45 minutes. Remove when top crust is golden brown. Allow pie to cool 45 minutes to 1 hour at room temperature before serving.
Apple pie is ready to serve...
