Pav Bhaji (Mumbai Street Food)

Pav Bhaji.. Yet another Mumbai's famous street food. As I have mentioned in my last post that what ever the street food we want to eat here. I have to cook at home only.. So I have been trying out many recipes on every weekends so that we don't forget the Indian famous street food. When I had been to Mumbai for the first time may be in 1998, there one of my friend had taken me to have Pav Bhaji. Belive me I din't like it at all and she felt bad. To keep her heart I had just eaten few bites.. The main reason was I use to think alot that whether he has washed his hands or not and he is looking clean or not.. That's where I use to stop myself to eat anything on streets. Then again I had gone to Mumbai form my office work and everybody forced me to have Pav Bhaji and I really don't belive myself I ate the full plate, it was so tasty. After that when ever I go to Mumbai I always eat Pav Bhaji everyday. Nowadays I don't think that much, but still I see people around and my H keeps telling me just eat don't look around..


Nowadays everything has become so easy to cook at home, so only we don't prefer to go out and eat specially street food. I keep trying many street food recipes which my H will miss because of me.. Never mind it is always good at home rather then eating out... Though this dish takes a little time and effort but it is worth waiting and I don't have pav buns in my picture but we had it with pav only. Because the pav was vanished while I was taking pictures.. Do try this dish and enjoy :)


Ingredient's
2 medium potatoes, peeled and diced
1 cups chopped cauliflower, 1/2 cup chopped green beans
1/2 cup peas, 1/2 cup chopped carrots, 1/2cup chopped cabbage
2 green chilies chopped
2tbsp ginger garlic paste
3 medium tomatoes, 1 large onion (finely chopped)
1/2tsp red chili, 1/2tsp turmeric, 1/2tsp coriander powder
1tbsp pav bhaji masala
1 tablespoon fennel seed powder (saunf)
1tsp dry mango powder
1/4 cup chopped coriander leaves
2tbsp butter, 2tbsp oil
Salt to taste
6 pav buns.

For Garnish:
1 medium chopped onion
few chopped coriander leaves
Few pieces of thinly sliced lemon
2tsp butter.



Cooking Method:
Boil all the vegetables with 1½ cup of water in a pressure cooker for 2 to 3 whistle. Don’t add too much water, just enough to cook.
After the vegetables are soft and tender, drain the excess water and mash them coarsely with a fork or potato masher.
Heat the oil and butter in a frying pan over medium heat. Add onion and saute for 1 to 2 minutes. then add tomatoes, green chilies, coriander, and ginger garlic paste and sauté for 2-3 minutes until they are soft.


Next add the red chili powder, fennel powder, turmeric, coriander powder and pav bhaji masala, mix them well and cook till the raw smell goes. Now add mashed vegetables. By using you wooden spoon, simultaneously mash and stir all the vegetables for 5 minutes. Add salt and stir-fry for another minute. Add about ¼ cup of water or as needed, and let it cook for a minute.
Turn off the heat. and add dry mango powder, mix it well
Toast the pav bun on tava using butter over medium heat until buns are golden brown from both sides.
Serve hot toasted buns with bhaji, garnish with chopped onion, coriander leaves, butter and sliced lemon.

Banana & Dry Fruits Bread...

Banana & Dry Fruits Bread... Banana is a fruit which I can never say no and can eat as many as I can in a day. Most of the time I add banana in my baking and it always gives me best results. First I was thinking will just bake banana bread, then I ended up adding dry fruits because it is very healthy. I think adding banana to cake, bread or muffins is one of the best choice and it gives a very soft and fluffy texture. This bread can be served in Breakfast and in Tea time also. One of the best bread I have bake till now...


Prep time: 10 minutes
Baking time: 50 to 55 minutes
Yield: One loaf.

Ingredient's.
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking powder
1/4 cup mix dry fruits
Pinch of salt
1 1/2 cups of all-purpose flour.



Baking Method.
Preheat the oven to 350°F (175°C). Whisk in the butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking powder and salt over the mixture and mix.



Now add the flour, dry fruits and mix it nicely. Pour mixture into a buttered 4x8 inch loaf pan. Sprinkle some chopped almond from top and Bake for 55 minutes (mine was done in 50 minutes). Cool on a rack.
Remove from pan and slice to serve.

Khaja.. (Sweet Pastry)

Khaja ... Khaja is called Pheni in oriya, this is an Oriya sweet made from maida or wheat flour, sugar and oil. It is made and eaten all throughout Indian subcontinent, though it is known by different names. It is prepared in the states of Bihar, Uttar Pradesh, Andhra Pradesh, Karnataka etc...

I wanted to try this at home from a long time but use to fell bore for the long process, actually after cooking this I really felt it is a very easy and can be done in 30 to 35 minutes. I use to eat this alot in my childhood days but my mom use to not allow me to eat from out side. So when ever my mom use to go to my aunt's place I and my brother use to run to the shop buy and finish it there only before even anyone see us.. Those days use to be the wonderful days eating out and not telling anyone...



Ingredient's For the Pastry. 
1 cup all purpose flour
2tsp hot oil
Oil for deep frying
2tbsp butter or ghee (to apply on pastry)

Ingredient's For the Sugar Syrup
1 cup sugar
1/2 cup water for syrup.


Cooking Method
In a large mixing bowl add flour and oil mix it well, then slowly add water to make stiff dough.
Knead it for 10-15 minutes or until it’s smooth and set aside for 5 to 10 minutes.
Roll the entire dough into a big rectangle and then spread the ghee or butter smoothly over the rolled dough.
Then roll the dough into a big rope, cut into 1′ size pieces. Take each piece and roll it again into 5-6′ size khaja.



Heat oil in a deep fry pan, medium-high first. Then turn the flame to medium-low once oil is hot.
Fry the khajas until it turns golden brown annd take out on a paper towel.
Then make sugar syrup (as you make for gulab jamun). Switch off the heat when syrup feels slightly sticky. When the sugar syrup is still hot dip the khaja one at a time and take it out on a wire rack.
Allow the Khaja to cool completely before serving..

Breakfast Walnut Muffins..

Walnut Muffins!!! After getting my hand set on oven I just feeling like keep baking and baking.. I have tried many recipes in last 1 week which I will be posting it soon.. I'm trying to bake everything in a less quantity so that I get a change to bake more and was thinking that this muffins will go for 2days till then will think of some other recipes, but it just got over in a day.... Now again i'm in a same thinking processes:) Adding walnut to muffins or a cakes I just love it, they taste so good feels like having more then one.. Try these tasty muffins for breakfast with a hot cup of coffee or tea..



Yeilds: 8 to 9 medium Muffins
Preparation time: 10minutes
Baking time: 20 minutes.

Ingredient's
1/2+1/4 cup all purpose flour
1/4 cup butter
1tsp vanilla essence
1tsp baking powder
1/2 cup sugar
1 egg
1/3 cup milk
1/4 cup finely chopped walnuts.


Baking Method.
Preheat your oven to 350 degrees. Line muffins tin with liners and set aside.
In a small bowl, mix together the flour and baking powder, set aside. 
In a another mixing bowl, cream together the sugar and butter. Add the eggs, vanilla and cream together until you get a smooth mixture.
Add the dry ingredients and walnuts, mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! 
Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.



Scoop the batter into your lined muffins tin, make sure it's only filled ¾ of the way up because they will rise.
Then sprinkle some more walnut from top and Bake for 20 minutes and let cool for sometime.
Serve for Breakfast with your favourite drinks..

Lemon Zest And Vanilla Muffins..

Lemon Zest And Vanilla Muffins...I baked this muffins on Monday just to get my hands on oven, because I have been always using OTG not oven and I was very scared to try also it took me a long time to start baking here... I have baked this muffins many times but I have not got the result as this muffins gave me, evenly raise and perfect colour. Now I know why people prefer Oven then OTG. I have made myself very clear once I go back to India (i don't know when will that happen) I'm going to buy a oven first... I started enjoying my baking again and very happy with results...


Yeilds: 8 to 9 medium Muffins
Preparation time: 10minutes
Baking time: 20 minutes.


Ingredient's.
1/2+1/4 cup all purpose flour
1/4 cup butter
1/3cup sugar 
1tsp vanilla essence
1tsp baking powder
1/3 cup milk
1tsp lemon zest
1egg.

In a small bowl, mix together the flour, lemon zest and baking powder, set aside. 
In a mixing bowl, cream together the sugar and butter. Add the eggs, vanilla and cream together until you get a smooth mixture.


Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for sometime.

Instant Almond Chocolate..

Instant Almond Chocolate!!! After getting a new laptop my life has again become so easy, I can't forget those 3days without laptop how i survived :) Though I din't get all my data back but still what ever I got i'm happy with it. To celebrate my happiness i made this almond chocolate at home.. This picture i had taken in India so only i din't bother to take a new picture again...


Coming back to the recipe, this is a easy to make chocolate at home of your choice and shape.. All you have to do is just melt chocolate with some almonds and put it into a mould of your choice and refrigerate for 2 to 3hours and delicious chocolate is ready to eat...



Ingredient's
250 gram chocolate (of your choice)
50gram finely chopped Almonds
2tbsp unsalted butter.


Method.
Take the chocolate bar and chop it finely, set it aside.
In a non-stick pan add butter, melt the butter on a very slow flame, when the butter is melted. Then add chopped chocolate and almonds and wait till the chocolate is melted completely. (You can even melt the chocolate in a double boiler also)
Then allow the chocolate to come to room temperature and pour the chocolate mixture to moulds and refrigerate for 2 to 3 hours..
Delicious chocolate is ready. Store them in a airtight container and Enjoy..

Mutter Paneer Makhanwala (Buttery Greenpeas With Cottage Cheese Gravy)

Mutter Paneer Makhanwala!!! I have eaten this curry once in Delhi and it was very yummy and buttery and after that i never got a change to eat again out side. So only i thought of trying it at home with less butter... Usually everybody cooks mutter paneer very often but some how in my family we are not that much fan of paneer.. I cook mutter paneer in some occasions only and this time i tried with only butter to give a buttery taste and different to. I tried to use very less butter as possible but you all know if you have to make something tasty you have to use right amount of ingredients.. This curry is one of those curry, once you start cooking you will never forget to cook in any occasions or parties...
 
 
Ingredients:
250gm paneer cubed
100gm green peas
1small cardamom, 2 cloves, 1small cinnamon stick
2 large onions, 3 medium tomatoes, 2 green chillies
1 tbsp ginger garlic paste
1tsp red chili powder,1tsp coriander powder
2tsp garam masala, 1/2 tsp turmeric powder
6 tsp Butter
1 1/2 cups water
Salt to taste
Coriander leaves chopped fine to garnish.
 
 
 
Cooking Method
Grind onions and green chili into a fine paste. Keep aside. Next grind tomatoes into fine paste and keep aside.
Heat 2tsp of butter in a pan and gently stir-fry the cubes of paneer till lite golden. Remove onto a paper towel and keep aside.
In the same vessel heat 3tsp of butter and add the cinnamon, cloves, cardamom and onion paste. Fry till it turns light brown. Add tomato paste, ginger and garlic paste and fry for another 2minutes. Add the red chilli, coriander, turmeric and garam masala powders, stirring continuously till the oil begins to separate from the masala.
Add the peas to the masala and fry for 2-3 minutes. Then add the paneer, water and salt, reduce flame to a simmer and cook till the gravy thickens.
Garnish with coriander leaves and left over butter and serve.
Mutter paneer Makhanwala tastes great with parathas, naans and even jeera rice.

Shamrock Milk Shake Cup Cakes..

Shamrock Milk Shake Cup Cakes... The shamrock refers to the young sprigs of clover or trefoil. It is known as a symbol of Ireland, with St. Patrick having used it as a metaphor for the Christian Trinity, according to legend. The name shamrock is derived from Irish seamróg, which is the diminutive version of the Irish word for clover (seamair) meaning simply "little clover" or "young clover. (Source from wikipedia)
 
 
 
Recipe adopted from Laura Vitale.
Makes-12
 
Ingredients
1 cup Granulated Sugar
1/4 cup of Unsalted Butter, softened at room Temperature
1/4 cup of Vegetable oil
2 Eggs
2tsp Vanilla
2 tsp of Baking Powder
1/8 tsp Salt
1 1/3 Cups All Purpose Flour
1/3 Cup Whole Milk.
 
 
For the Frosting
1 Stick of Unsalted Butter, softened
1/2 tsp of Mint Extract
4 cups of Confectioner Sugar
Pinch of green food color.
 
 
 
Baking Method
Preheat your oven to 350 degrees. Line your cupcake tin with liners and set aside.
In a small bowl, mix together the flour, salt, and baking powder, set aside.
In a mixing bowl, cream together the sugar, oil and butter. Add the eggs and vanilla, cream together until you get a smooth mixture. Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes before frosting.
 
 
To make the frosting combine together all the frosting ingredients and mix together to combine. Add the frosting in a piping bag fitted with a large star tip and pipe the frosting onto the cupcakes.

Choco Chip Muffins...

Choco Chip Muffins.. Nowadays Muffins are very famous in every Indian families, specially with kids... I prefer to make this kind of food at home only, because we know what ingredients we are adding and it is always a better option. Choco chip muffins are my favorite, i bake them very often and finished it in a 2 to 3days.. They go very well with hot cup of tea for breakfast.
 

 
Ingredient's
1/2+1/6 cups all-purpose flour
1tsp baking powder
1/3 cup milk
1tsp vanilla extract
1/4 cup butter
1/3 cup white sugar
1egg, room temperature
1/4 cup choco chips.
 
 
Baking Method
Preheat an oven to 350 degrees F (175 degrees C). Line 9 cup muffin pans with paper baking cups.
Stir together the flour, baking powder and choco chips in a large bowl, set it aside.
Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the egg and blend for another 1minute.
Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed. 

 
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes...
You can them in a air tight container for 2 to 3days.
