Egg Less Chocolate Cake (Happy New Year 2011)

Happy New Year 2011
Happy New Year to every body. This time i am celebrating my first new year with my husband, and this is the happiest movement of my life. To celebrate my New Year i baked a egg less chocolate cake because this is his favorite cake and i always like giving him surprises and he loves it very much, his happiness makes me happy and feel special. This year we are having a blast :-)



Ingredient's
1 + 1/2 cup (170 g) all-purpose flour
3 tablespoons unsweetened cocoa powder (dutched/dark)
2 teaspoons baking powder
2 pinches salt
1 cup (220 g) sugar
2 teaspoons vanilla essence
3/4 cup (1.8 dl) milk
3/4 cup (1.8 dl) vegetable oil (flavorless) or butter



Baking Method
Preheat oven to 180 deg C
Grease a 9 inch (23 cm) cake tin.
Mix flour, cocoa powder, baking powder, salt, sugar and vanilla essence in a bowl.
Add milk, vegetable oil.
Mix everything together until smooth. If the batter is too runny you may add slightly more flour.
Transfer to bake tin and bake at 180 degrees until a wooden pick inserted in center comes out clean, approximately 30 to 35 minutes.
Remove form the oven and cool it for atleast 2 to 3hr

Then pour the extra chocolate on the cake and decorate with strawberry or anything what u like.

Green Gram Dal Parathas ( Whole Moong Dal)

I made this parathas with the left over dal. Yesterday for lunch i cooked Green gram dal and the quantity was more for 3 people. And i don't wanted to throw or keep it in the fridge, then i realize why not make parathas for dinner with this left over dal and guess what no body came to know this parathas was made by a left over dal. Ingredient's
2cup of Cooked dal
2 cup of wheet flour
3 tbsp oil, Salt
Water as per required



Cooking Method
Mix dal, wheet flour, Salt and water , make a soft dough, finish the dough with oil and set aside for 30 minutes, Then make a small balls of dough and roll out the chapti and cook applying ghee or oil. 
Serve hot with Curd and Pickle.

Baked Stuffed Capsicum

Capsicum is a genus of flowering plants in the nightshade family, Solanaceae. Its species are native to the Americas, where they have been cultivated for thousands of years by the people of the tropical Americas, and are now cultivated worldwide. Some of the members of Capsicumare used as spices, vegetables, and medicines. The fruit of Capsicum plants have a variety of names depending on place and type. They are commonly called chilli pepper, red or green pepper, or sweet pepper in Britain, and typically just capsicum in Australian, New Zealand, and Indian. The large mild form is called bell pepper in the U.S. and Canada. They are called paprika in some other countries (although paprika can also refer to the powdered spice made from various capsicum fruit). The generic name is derived from the Greek word καπτο (kapto), meaning "to bite" or "to swallow.
Capsicum fruits and peppers can be eaten raw or cooked. Those used in cooking are generally varieties of the C. annuum and C. frutescensspecies, though a few others are used as well. They are suitable for stuffing with fillings such as cheese, meat or rice.
They are also frequently used both chopped and raw in salads, or cooked in stir-fries or other mixed dishes. They can be sliced into strips and fried, roasted whole or in pieces, or chopped and incorporated into salsas or other sauces. (Sources From Wikipedia)



3 to 4 Capsicum (simlamirch)
2 boiled potatoes
1 Onion finely chopped
1/4th tsp turmeric powder
Red chili powder to taste
1/4th tsp Garam masala
1/4th tsp Dry mango powder (amchur) 
Cashew 4 to 5
Salt To Taste
Oil for frying


Preparation:
Wash the capsicum and remove the inner part of it and apply oil and set aside
In a bowl mash the potatoes, now add all the ingredients with it , mix it nicely , In a fry pan add 2tbsp oil and fry the mixture for 5 minutes. Then take the capsicum and fill the mixture and keep cashew and apply oil on top. Take a baking tray and place the stuffed capsicum, bake in a Pre-heat oven for 30 minutes in 185c.
Garnish the stuffed capsicum with coriander leaves and. Serve hot.

Mutton Biryani

Biryani, a unique rice dish is relished by millions of people all over the Indian sub continent. It is made up of rice,spices and meat.In a way it can be compared to the casserole dishes of the west where all the ingredients are assembled and cooked together.It is a unique combination of rice, meat,yogurt and various spices, sometimes as many as 21 spices which include exotic spices like saffron and rose petals.
The most common version of Biryani is with meat and chicken, though in many homes all over India, the vegetarian version is also made, and is usually called Tehri or vegetable Biryani.Depending on the region it is made in, Biryani comes in various styles like Hyderabadi Biryani, Lucknawi etc each with its own distinctive regional touch. Biryani is usually served with raita,korma or curry.



Ingredients
1/2 kg Basmati rice
Mutton 1/2 kg
2 big size onion, 4 tomato, 3 green chilly, thinly slices
Pudina and Coriander leaves as per ur requirnment, finely chopped
Ginger, garlic paste 2tbs
2tbs red chilly powder, 1tbs turmeric, 1tbs coriander powder, 1tbs garam masala
1cup curd, 2tbs lemon juice
Bay leaves 3 to 4, 2 small elaichi (Cordamom)
Oil as per ur requirment
Salt as per taste



Cooking method
Wash and Soak the basmati rice for at least 8 to 10 minutes, Wash and cut the mutton and set it aside.
Heat up the pressure cooker add oil, elaichi, tejpatta, leave till it become's brown, Add onion, ginger garlic paste fry for 2mints, then add mutton, turmeric, and salt, fry it till the mutton starts leaving oil, Then add the all masala's stir it for 50sec, Add tomato, curd, lemon, green chilly, pudina and coriander leafs cook for 2 to 3 whistle, in a medium flam (NOTE DONT ADD ANY WATER IN THE CHICKEN) In a mean time, Half boil the rice in a seprate pan. add water in to rice as per it required's, Allow the pressure to go completely from the pressure cooker, Then in a big pan add the mutton and the rice mix it up slowly..
Cover the lid and cook till the rice is completely cooked in a low flame.
Serve it hot with (Raita)
Delicious Mutton Biryani is ready to serve....

Soya Chunks Biryani (Pressure Cooker Version)

Soya biryani is a protein rich biryani recipe with the soya chunks cooked and then added to rice along with whole spices and garam masala powder.. This was my first attempt to cook the soya chunks biryani and it turned out as usual very tasty. I was not even prepared to cook this biryani but just because of my S-I-L i cooked this biryani. Even i was also thinking that our breakfast and lunch is being repeated again and again,so when i opened my draw i saw a pack of Nutarila soya chunks so i thought why not to give a try in soya chunk only. First i thought to prepare paluo and finally finished with biryani... And it was very tasty and very healthy too..



Ingredient's
2 cup of soya chunks
1/2kg basmati rice
2 cup of all veggie's (mutter, gobi, potato, carrot) cut in to small pieces
2 onion, 3 green chillies, 3 tomatos, finely chopped
1/2cup curd, 3tbsp of lemon juice
1tbsp red chillies powder, 1tbsp turmeric, 1tbsp coriander powder
1 cardamom , 3 tej pata, 3 dry red chillies
Oil and Salt as per taste




Cooking Method
Soak the soya chunks in water for 20 minutes, Then in a pressure cooker add oil, red chillies, tej pata and cardamom , after 20 sec, add onion and green chillies fry to golden brown, add all the masala powder, and fry 5 minutes then add tomato, curd and lemon juice and cook for another 5 to 10 minutes, Now add the soya, all the veggies and salt, then allow the veggies to soak the masala and then finally add the rice and water as per required, and cook for 3 whistle, 1 in high flame and 2 in low flame.
Serve hot with Raita.

Masoor Dal

Masoor dal is not a regular lentil in my kitchen but when I do prepare it, this dal is much loved and relished by all at home. A versatile dal that each time I prepare its a variation from the one prepared earlier. Loved the creamy texture of the dal with wonderful flavors, none overwhelming their counterparts. Rotis with masoor dal goes very well. But this dal i have cooked special to go with Ghee Rice. Simple foods are such a joy, aren’t they?


Ingredient's
100 gram of Masoor dal
1 onion, 3 green chillies, 2 tomato's, finely chopped
1/2tbsp turmeric, 1/2tbsp coriander powder, 1/2tbsp kitchen king masala from (Everest)
1tbsp ginger garlic paste, 1/2tbsp mustard seeds, 8 to 10 curry leaves
Oil and Salt as per taste

Cooking Method
Wash and soak the dal for 10 to 15 minutes, In a pressure cooker add oil, mustard seeds and curry leaves, when they splutter, add ginger garlic paste, saute for few seconds. Then add onion and green chillies, fry to golden brown , add masala powder, and tomato, fry for atlest 15 minutes. Now add the dal and salt , allow dal to soak masala for 5 minutes, then add 2 cup of water. Close the lid and allow to whistle in a low flame.
Serve with Ghee rice.

Roasted Mutton Liver

This dish i had when my Elder-bother-in-law cooked and it was so tasty. From that time i have developed taste for eating mutton liver , He is a master in cooking specially when he cooks non-veg there is not even a single day when every body had not lick their plates. I have learned many non-veg dishes from him and i will try them soon, so that even you guys can also try the recipe. I learned this recipe from him only and it was very tasty but still i feel he cooks the best... All this credit goes to him for being my very good teacher...



Ingredient's
200 gram of Mutton Liver
1onion, 3 green chillies, coriander leafs
1/2 tbsp black pepper, 1tbsp ginger garlic paste
1/2tbsp red chilly powder, 1/2tbsp turmeric, 1/2tbsp garam masala
3tbsp Oil and Salt to taste

Cooking Method
Marinate the liver with all powder masala and little bit of salt, and keep it in refrigerator for 1 hour
Make a paste of onion, green chillies, coriander leafs, black pepper and ginger garlic paste, to a smooth paste. Heat deep frying pan and add oil, when the oil is hot add the masala paste and fry till it gets golden brown, after that add the marinated liver and salt then cook till it is completely cooked.
Garnish with chopped coriander leafs and Serve with Roti or as a Side Dish.

Urad Dal (Green Gram and Black Urad Dal)


Ingredients

200 gram Urad dal
1 medium size onion
2 green chilly
1 medium size tomato
Ginger garlic paste 1tbs
Red chilly powder 1tbs, turmeric powder 1tbs, garam masala 1tbs
Mustard seeds 1tbs
Vegetable oil 2tbs
Salt

Cooking Method

Boil urad dal and 2cup of water for 20 mints in pressure cooker separately
make a thick paste of chilly powder, turmeric and garam masala
heat up the frying pan add oil and mustard seeds, add onion , green chilly and ginger garlic paste fry till it gets golden brown, then add masala paste and tomato cook till it starts leaving oil , then add urad dal 1cup of water and salt and cook till it become’s thick.
Garnish with coriander leafs and serve it hot with ROTI and RICE.

Phara....Fried Indian Dumpling


Ingredient's
100gram channa dal and 50gram green split gram dal
200 gram rice flour
15 garlic cloves, 5 green chillies
1tbsp turmeric, 2tbsp mustard seeds
Salt to taste
Oil for frying


Cooking Method
Step:1
Soak both dal overnight, then blend together with garlic, green chillies, turmeric and salt. (Not to a smooth paste). Make a soft dough with rice flour and set it aside for 10 minutes. Then apply little oil on your palm and make small balls from dough, and then make small circle shape, and keep little dal paste in center and fold it (Don't close it completely). Then stem it for 20 minutes. after steaming it, allow it to cool and cut them in to 2pieces.

Step:2
In a deep frying pan add oil and mustard seeds, when they splutter, add the cut phara (Dumpling) and sprinkle some salt on it and fry it to lite brown.
Serve with Tea in breakfast .

Grill Chicken Kabab

First time i tried cooking chicken in a oven, thinking that whether it will be good or not but fortunately it came out so well and tasty. Now i feel that it was worth buying a oven, When i had bought oven, i was thinking that i will cook many different dishes and i tried 2 to 3 dishes which didn't turn out well so i was bit upset, and i was telling my hubby it is waste of money. Today my hubby forced me to grill chicken in oven and i am thankful to him for bringing back the interest in me to cook in oven. This chicken was so so tasty and every one was very happy and that makes me very very happy:)



Ingredient's
6pcs of chicken 
3tbsp of lemon juice
1/2tbsp of red chilly powder, 1/2tbsp of turmeric powder
1/2tbsp of coriander powder, 1/2tbsp of ginger garlic paste
Salt to taste




Cooking Method
In a mixing bowl add the above ingredients make a thick paste, marinate chicken and set it aside for 1hour
Pre-heat the oven in 180c  for 10minutes, then put the chicken pieces in a rotisserie rod and apply  lemon juice and oil and grill it for 25 to 30 minutes.
Serve with Drinks and enjoy.

Mutton Bone Stew



Ingredient's
250 gram of mutton with bone or boneless
1 onion, 2 green chillies, 4 garlic cloves, chopped finely
2tbsp finely chopped coriander leafs, and 2 tbsp of finely chopped mint leafs
1tbsp of ginger garlic paste
1/2tbsp turmeric, 1/2 tbsp mustard seeds
Oil and Salt as per taste




Cooking Method
In a pressure cooker add oil and mustard seeds, when they splutter, add onion and green chillies fry it to golden brown then add ginger garlic paste, mutton and salt fry to atleast 5 minutes, then add turmeric, coriander leafs, mint leafs and 2 to 3cup of water, add salt if needed, close the pressure cooker and allow 3 whistle..
Serve hot hot as a soup or with plain white rice.

Raisin Bread

I love fresh made bread. You can make all sorts of great bread but a recipe I particularly like is a good raisin bread. I could eat a whole loaf. Anyway here is a great raisin bread recipe that you can make it easily... I must thanks to Priya for telling me how to bake bread.. First time i baked bread and thank god it came out very well..:)


Ingredient's
1tbsp active dry yeast
1/4 cup warm water
1 cup raisins
1/4 cup soft butter
1/4 cup sugar
1 1/2 teaspoons salt
1/2 cup scalded milk
3 3/4 cups all-purpose flour
2 eggs, beaten




Preparation
Dissolve yeast in warm water. In a large bowl, combine raisins, butter, sugar, salt, and hot milk, stir to dissolve the sugar. Let mixture cool to lukewarm. Stir in 1 1/2 cups of the flour, beat well. 
Add yeast mixture and the beaten eggs, mix to blend well. Add enough of the remaining flour to make a soft but stiff dough. 
Turn out onto a lightly floured surface and knead for about 10 minutes, until dough is smooth and elastic. Place dough in a lightly buttered bowl, turning once to grease the surface. 
Cover with a clean dish cloth, let stand in a warm place until doubled in bulk, about 1 1/2 hours. 
Punch dough down and divide into 2 portions. Cover and let rest for 10 minutes. Shape into a round. and place it in a baking tray. Cover and let rise again for about 45 to 60 minutes, until almost double. apply some butter on the dough. 
Bake at 175 degree for 25 minutes in a pre heated oven, placing foil over loaves the last 10 minutes, if loaves are getting too brown. Remove loaves from pans and let cool on racks.

Mutton Kofta Masala

Mutton kofta is based on indian culinary concepts. The mutton kofta is commonly made by fry. Mutton kofta has become one of the most popular side dish around the world.




Ingredient's
For Kofta
100 gram kheema
2tbsp coconut paste, 2 green chillies, few coriander leaves, 3tbsp basen, 1tbsp turmeric, 1/2tbsp garam masala, 1/2tbsp red chilly powder, 1/2tbsp coriander powder, 1/2tbsp black pepper seeds and salt to taste 
Oil to deep fry


Method
Mix all the ingredients in blender and make to a smooth paste. (Dont add water while mixing)
Remove in a plate and make small samll balls and fry them for lite golden brown, and set a side
After the gravy half cooked add the kofta.




For Curry
2 onion, 2 tomatos, finely chopped 
2tbsp coconut paste
coriander leavs, 2 green chillies, 8 curry leaves
1tbsp ginger garlic paste, 1/2 tbsp black pepper seeds
Salt and Oil to taste


Method
Make a paste fine paste of coriander leaves, green chillies, curry leaves, ginger garlic paste, black pepper seeds
In a deep frying pan, add oil, onion, green chillies, fry it to golden brown, then add coconut paste and masala paste fry it for 4 minutes, then add chopped tomato, keep stirring for atleast 2 to 3 minutes
Now add 1 cup of water allow it to boil, then add half fried kofta, and cook for another 5 to 6 minutes or till gravy becomes thick.
Mutton kofta is ready to serve with Roti.

Dill leaves and Potato Sabji

The green dill leaves are feathery and soft. The leaves and seeds are flavorful seasonings (often used in making pickles). Dried dill leaves are commonly known as dill weed..... This recipe is one of the very simple recipe to cook in a lesser time..


Ingredient's
2 bunch of dill leaves
3 potato's
8 garlic cloves, 2 green chillies,
1tbsp cumin, 1tbsp turmeric powder
1tbsp oil
Salt to taste

Cooking Method
Chop and clean the dill leaves, make a small pieces of potato and set it aside
In deep frying pan add chopped green chillies, garlic and cumin seeds, fry for 2 minutes
Add turmeric, dill leaves, potato and salt, mix it well and cook for 10 to 15 minutes, in a medium flame.
Serve with Roti or Poori.

Chiku Milk Shake

Chiku shake is a famous and healthy milk shake and easy to make and healthy to drink. Chiku is very good for health and when prepared with milk ,chiku shake is very tasty shake :)


Ingredient's
4 Chiku
1 cup milk
2 tbsp sugar
2 cardamom

Method
Remove the skin and seeds of the chiku and cut into pieces.
Add this pieces and 1 cup of chilled milk into the juicer.
Run the mixer until smooth paste is obtained.
Add rest of the milk and sugar,run the mixer again for 30 sec.
Pour into a serving glass and place 1 scoop of ice cream at the top(optional)

Sugar Syrup Peda

Sugar syrup peda is something very different peda . It gives you the taste of Gulab Jamun but the shape will be different.. I was thinking to make gulab jamun only but i thought why not make it different, and i end up making this recipe with all purpose flour... It gives u really very delicious taste and looks very beautiful too... Me and my hubby enjoyed it very much by eating this peda..


Ingredient's
1 cup all purpose flour
3tbsp ghee
25gm khova 
1 pinch baking soda, 1 pinch baking powder
Milk as per required to make soft dough
Oil to deep fry


For sugar Syrup
200gm sugar
3cup of water
1 cardamom 


Method
Add sugar, water and cardamom together in a deep pan and making a thick sugar syrup and set aside
In a big bowl mix all the above ingredients and make soft dough adding milk
Make a 6 small ball from dough, and give shape as per u like , deep fry them to golden brown. and allow it to cool , dip in the sugar syrup and sprinkle some sugar powder on it and Serve as a Dessert.

Chocolate Cake To Celebrate My First Year Wedding Anniversary

Yesterday was my First year Wedding Anniversary and to celebrate that first time i baked a chocolate cake to give my husband a surprise as he loves chocolate. First i thought why not to give him chocolate as a gift then i realized it is his wedding anniversary not B'day :) Then while surfing some website how to surprise your husband, from there i got an idea to bake chocolate cake and buy some good gift which he likes. There was no more gifts left what he likes because every thing is with him already, there also i had a problem what to buy, then finely i got gift.... and made him surprise....

He made me double surprised by arranging a candle light dinner in a restaurant. I was really very happy it was like a dream for me, Then we finished a dinner in a restaurant and came back to home, and celebrated again by cutting my sweet little chocolate cake. We enjoyed the day very much .. may god bless me with lot more wedding anniversary like this. with my lovely husband... hehehehehe



To Bake Chocolate Cake You All Need is.

Yummy Desi Pasta

First time i tried pasta in a different way and it was very delicious. This indian masala and cheese works very well together for pasta , it had a little bit of Indian and Italian taste. I made this for breakfast and we enjoyed very much over weekend morning.


Ingredient's
250 gram pasta
1 onion, 2 green chillies, 1 tomato, finely chopped
1/2 tbsp red chilly powder, 1/2 tbsp coriander powder, 1/2 tbsp garam masala, 1/2 tbsp turmeric powder
3tbsp of melted butter
50 gram cheese
10 curry leaves
1/2tbsp mustard seeds
Salt as per taste
Coriander leaves for garnishing


Cooking Method
Boil the pasta as per the instruction on the pack, after boiled sprinkle some oil on it and set a side
In a deep frying pan, add butter, mustard seeds and curry leaves, when they splutter, add onion and green chillies sauté for 4 minutes, then add all the masala powder fry for some time, after that add tomato cook for 2 to 3 minutes. Now add cheese and pasta mix it will till the cheese is spread all over the pasta, sprinkle some salt and coriander leaves, now mix it gently and Serve Hot with Tomato sauce.

Butter Cookies (Celebrating My 100 Posts)

Finally 100 posts since I began the blog. I’ve been amazed at what all has happened since then, so many of you have read and comment on my recipes... Thanks alot for supporting me to complete my 100 recipes. Now i can proudly say to any one that even i know to cook. Still my parents don't believe that i cook delicious food. Though i love to cook but i use to never enter in kitchen, after marriage when i and my hubby went on business trip for 6 months to Seoul , there i was not having much to do on weekdays except reading books that also hardly i use to read..... One day i was just reading a food blog and thought why not do blogging , then i spoke to my hubby even he said good you should start blogging. From there i started my journey of cooking again...... Now i can't resist my self for cooking. Cooking is really a fun specially when everybody eats and appreciate that time i feel very very happy:-)

To celebrate my 100 post, first time i baked butter cookies last night. And they came out very well and they taste delicious...



Ingredients
1 cup butter
1 cup white sugar
1 egg
2 2/3 cups all-purpose flour
1/4 teaspoon salt

1 pinch of baking powder and 1 pinch of baking soda
2 teaspoons vanilla extract

Method
In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour, salt, baking powder and baking soda, mix it well then stir into the sugar mixture.
Preheat oven to 400 degrees F (200 degrees C). Then make a small small cookies and place it on the cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.

Mix Fruit Custurd


Ingredient's
1/2 ltr milk
2tbsp of custard powder
3tbsp of sugar

For Garnishing
1/2 apple, 1 banana, 1 small pomegranate, 10 cherry's, 20 white grapes  
100gram of , cashew, Almond, Raisin

Cooking Method
Mix 2tbsp of custard powder with 3tbsp of milk taken from 1/2 ltr milk, to form a paste
Boil the remaining milk and then add 3tbap of sugar
Add the custard paste slowly to the boiling milk, stir continuously for 1 to 2 minutes
Except cheey's and greaps, cut all the fruits and dry fruits in to small pieces
Let it cool for 30 minutes, then add dry fruits and fruits mix it . Keep it in the fridge for 1-2 hours
Serve cold with Ice cream or as it is.

Masala Poha

I made this poha to get a different taste for my tongue, i was fed up of eating all diet food for the breakfast. On last sunday i told my hubby that i am not going to eat diet food on sundays. He smiled at me and told even i was waiting for this only...... i look at him and replied NO iam not going cook anything, it is you whose going to cook breakfast today. Then we both decided to help each other while cooking............And cooking together it is really a fun if something goes wrong in cooking you can easily blame your husband.. heheheheheh


Ingredient's
1 cup Beaten Rice (Poha)
1 potato, cut finely
3 Onions, chopped, 1 Green Chilli, slit
¼ tsp Cumin Seeds
¼ tsp Mustard Seeds
7-8 Curry Leaves
¼ tsp Turmeric Powder
¼ tsp Red chilly Powder
¼ tsp Coriander  Powder
¼ tsp Garam masala
2tbsp lemon juice




Cooking Method
Wash the beaten rice and drain it. set aside
Heat the oil in a kadhai and add the mustard, and cumin. When the mustard splutters, add the green chilli and onion. Add the curry leaves and fry for a couple of minutes. Add potato, and all the dry masala powder, cover cook for a few minutes. Add the beaten rice and lemon juice mix it gently. Garnish with some coriander leafs . Enjoy this as soon as it is made.
