Vanilla Vanilla Cupcake!!!!

Vanilla Vanilla Cupcakes. This is my first colorful frosting on vanilla cupcakes, i had never tried food color with my frosting. This time one of my cupcake buyer requested me to make some colorful frosting for cupcakes. Actually i don't like colors for my food, but what to do you have listen to them. After thinking for a very longtime i decided to chose my 2 favorite colors(edible food colours- chemical free) and kept the design very simple, so that they look pretty and colorful too.... I think when you add color they look very pretty and I have fallen in love with these cupcake frosting, from now on i will play with more color...
 
 Ingredient's
1/2+1/6 cup all purpose flour
1/4 cup butter
1/3cup sugar
1tsp vanilla essence
1tsp baking powder
1/3 cup milk
1egg.
 
 
 
 For Vanilla Butter Cream
1/4cup butter
1cup icing sugar
2tsp cream
1tsp vanilla essence
pinch of food color of your choice.
 

Baking Method
Preheat your oven to 350 degrees. Line your cupcake tin with liners and set aside.
In a small bowl, mix together the flour, salt, vanilla and baking powder, set aside.
In a mixing bowl, cream together the sugar and butter. Add the eggs and cream together until you get a smooth mixture. Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes before frosting. 
 

To Make Butter Cream
In a mixing bowl add butter and beat till fluffy and slowly add sugar and beat for 1minute. Then add vanilla, cream and food color. mix together to combine well for 1 to 2 minutes. Add the frosting in a piping bag fitted with a large star tip and pipe the frosting onto the cupcakes.

Valentine's Day Special.. Double Chocolate Muffins!!!

Last Valentine's day my hubby had surprised me with a very beautiful gift, but this time i will surprise him by baking his favorite muffins and buying him a gift, which actually i have still not decided, will finish deciding it by tonight for gift. I wanted to bake something with strawberry for valentines day and chocolate for my birthday which is on 17th feb. Thinking that i went to buy strawberry in the morning and bought only 1pack and they were so beautiful and tempting i couldn't not control myself and i finished it all except 2 strawberry, which i have decorated my chocolate muffins... This is the best gift i can give to my hubby and i'm very excited to see his reaction.. Happy Valentine's Day to all my friends :)



Ingredients 
1 cup all-purpose flour 
6 tablespoons unsweetened cocoa powder 
2 teaspoons baking powder 
2 eggs 
1 large banana 
3/4 cup sugar
1/4 cup choco chips 
1 teaspoon vanilla essence 
1tbsp choco chips (for sprinkling on top)
1/2 cup milk 
2/3 cup (150 g) butter (room temperature)



Baking Method 
Preheat oven to 350 deg F (180 deg C). 
Grease muffin tins (paper muffin bake cups are recommended) or 12-15 medium cups. 
In a bowl mix flour, cocoa powder, baking powder and choco chips together and keep it aside 
In a different bowl beat the butter with sugar till fluffy, then add eggs and banana. beat for 1minute. Now add vanilla and milk. beat for another 1 minute. Then fold in the flour mixture and mix it nicely. 


Then pour the mixture into a grease muffin tins and sprinkle choco chips on top. Bake at 180c, or until a wooden pick inserted in center comes out clean, about 30 minutes for XL muffins, about 20 minutes for medium size muffins. Make a little cream roses and decorate with strawberry. The Chocolate Muffins may be served hot or at room temperature.

Merry Christmas!!!! Eggless Mini Bundt Cake.

It's Christmas time again. Merry Christmas to all my blogger friends and readers. Do lots of shopping, cooking and enjoy your holidays... I have made this bundt as i had made the pound cake with little bit of change in ingredient's.. And this bundt also had come out very spongy, this year i'm doing lots of baking, there are many more recipes yet to come, u'll all see it very soon :)


Ingredient's
1+1/2cups all purpose flour
1/2cup butter, room temperature
1/2cups sugar
1cup plain yogurt
1/4cup milk
1tsp vanilla extract
1tsp baking powder
1tsp baking soda
4tbsp dried black grapes and raisin.


For the icing
2tbsp icing sugar
1/2tbsp warm water.


Baking Method
Preheat oven at 350F/180C for 10minutes. Grease and flour the mini bundt cake tin.
In a small bowl blend together the, milk, yogurt and vanilla extract.
In another small bowl sift together the flour, baking powder, baking soda, set aside.
Cream the butter and sugar in a large bowl until it’s light and fluffy. To this mixture, add the liquid ingredients in 3 additions, beating well after each addition.
Now combine the dry ingredients and blend well. Stir in the black grapes.
Pour the batter into the prepared pan and bake for about 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean. I made 6 mini bundt cake from this batter.
Remove the pan from the oven and let it cool on a wire rack. You will be able to remove the cake from the pan in about 10-15 minutes. Keep the cake on the wire rack and let it cool completely.
After the cake completely cooled pour the icing on it..

Eggless Pound Cake!!! To celebrate Christmas

Pound cake refers to a type of cake traditionally made with a pound of each of four ingredients: flour, butter, eggs, and sugar. This is the way to make a perfect pound cake, but i have not used egg in my pound cake so i don't call it a perfect pound cake. Many people don't prefer egg in their cakes, it is the same case with my hubby also. What ever i bake i keep in my mind to use very less eggs in it. Last night i was just going through some websites there this recipe caught my eyes and i have changed the many ingredient's, but still the result was awesome. The cake was very soft and good to taste... So friends do try this recipe and let know :)


Ingredient's
1+1/2cups all purpose flour
1/2cup butter, room temperature
1/2cups sugar
1cup plain yogurt
1/4cup milk
1tsp vanilla extract
1tsp baking powder
1tsp baking soda
1/4tsp salt
4tbsp dried black grapes.

Bundt Cake .. In My Style!!! (Eid Special)

Bundt Cake, this was my dream to bake this cake from a long long time but never had confidence. Last week i was just going through few blogs, from there i got this recipe and i got the confidence to give it a try. I have changed few ingredients and the measurement to this bundt cake original recipe, and it was the best cake i have ever made. Though this was my first attempt to bake this bundt cake, believe me i was shocked by the results. Thanks to the people who made this bundt cake and also gave me the confidence to bake this very difficult cake.. Here is the recipe for you all...


Ingredients
2 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup unsalted butter, melted
1 1/2 cups sugar
1 large lemon and lemon zest
4 large eggs.


For Glaze on top 
1 cup confectioners' sugar
1 to 2 tablespoons water.


Baking Method
Preheat oven to 350 degrees. Make the cake. In a medium bowl, whisk together flour, cinnamon, baking powder, salt, and baking soda.
In a large bowl, combine butter, brown sugar, eggs, lemon juice and zest. Whisk until smooth. Gradually whisk in dry ingredients just until combined (do not overmix). Pour the batter in to the prepared bundt cake pan and smooth top.


Bake until a tester inserted in cake comes out clean, about 50 to 60 minutes. Cool in pan on rack 15 minutes, invert onto rack to cool completely.
Make the Glaze. Whisk together confectioners' sugar and enough water to form a thick yet pourable glaze. Set rack with cake over a piece of wax paper (for easy cleanup) drizzle cake with glaze, and allow the glaze to set before serving. Cut into pices and serve with some whipped cream or as it is.

Orange Muffin's..

Muffin is an American English name for a type of quick bread that is baked in small portions. Many forms are somewhat like small cakes or cupcakes in shape, although they usually are not as sweet as cupcakes and generally lack frosting. They may be filled with sweet fillings, such as chocolate, orange, toffee, lemons, or blueberries. I have tried with orange and the muffin has come out very tasty and beautiful...


Ingredients
3 eggs
1 large orange pulp 
1/2 cup sugar
1 1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon vanilla essence
1/4 cup milk
1/2 cup butter (room temperature)


Baking Method
Preheat oven to 350 deg F (180 deg C).
Grease muffin tins (paper muffin bake cups are recommended) or 12-15 medium cups.
In a bowl mix flour and baking powder together and keep it aside

Choco Banana Muffins..



Ingredients
2 eggs
1 large banana
1 cup sugar
1 cup all-purpose flour
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon vanilla essence
1tsp sesame seeds (for sprinkling on top)
2/3 cup milk
2/3 cup (150 g) butter (room temperature)

Preheat oven to 350 deg F (180 deg C).
Grease muffin tins (paper muffin bake cups are recommended) or 12-15 medium cups.
In a bowl mix flour, cocoa powder and baking powder together and keep it aside

Madeira Cake!!!

Madeira cake is a sponge cake in traditional English cookery. The Madeira Cake has a firm yet light texture, eaten with tea or rarely for breakfast and is traditionally flavoured with lemon. Dating back to an original recipe in the 18th century or 19th century, it is not unlike a simple pound cake or yellow cake. The Madeira Cake is sometimes mistakenly thought to originate from the Madeira Islands; however, that is not the case as it was instead named after the Madeira wine, which was popular in England at the time and was often served with the cake. Nowadays, it is often served with tea or liqueurs. (Source from wikipedia)


Ingredient's
Softened Unsalted Butter - 1 cup
Fine Grain Sugar - 3/4 cup (plus 1 tablespoon for sprinkling)
Lemon - 1 (Grated Zest and Juice)
Eggs - 3 large
Self Rising Flour - 1 and 1/3 cup
All Purpose Flour - 1/2 cup
Baking Powder - 1/4 teaspoon
9 x 5-inch Loaf Pan - Buttered and Lined


Cooking Method
Get all the ingredients at room temperature before starting. Preheat the oven to 180 degrees C.
Sift the self rising flour, all purpose flour and baking powder, together, Thrice and keep aside. Cream the butter and 3/4 cup sugar using an electric beater. Once they are well creamed, grate in the zest of the lemon. Beat well till it is combined.


Add the eggs one at a time with a tablespoon of flour for each. Beat well after each addition. Once all the 3 eggs are in, and the mixture is well beaten, gently FOLD IN, with a wooden spoon, the rest of the flour in small batches. Finally put in the juice of the lemon. Mix well with the spoon and pour the batter into the prepared tin. Sprinkle the top with sugar as it goes into the oven.


Bake for 1 hour or until a tester comes out clean (mine got done in just under 50 minutes. I suggest you check after 45 minutes to prevent any burns. Remove the tin to a wire rack and let cool in the pan before turning out.
