Plum Cake.. Merry Christmas 2013.

Plum Cake - I had got all the ingredient's well before 1 week and had kept on kitchen slab last night to make sure that I don't forget to bake it today morning. It was a long pending ToDo in my list during X'mas and due to one or the other reason it was always missed... Whole night I was dreaming about the cake only and could not sleep for a very long time.As soon as I woke up, ran to kitchen and started baking the cake so that I can take the picture when the sun is still bright(Sun light always brings best pictures). If I would have got late then I would have not got so good pictures.. Here the sun is so unpredictable and I don't get enough time to relax and do the work. That is the main reason I have to finish my blog work before noon. Any ways all this part of life I am learning to go with flow.. Merry Christmas to everyone enjoy your day to the fullest...



Ingredient's.
3/4 cup all purpose flour
2+1/2tbsp cocoa powder
1tsp baking powder
1/2tbsp instant coffee
1/2 cup butter
2 eggs
1/2 cup sugar
1tsp vanilla essence
1/2 cup milk
1 cup mix berry's, nuts and tutti frutti.


Baking Method.
Preheat oven to 180 degrees C. Butter the square baking pan and keep it aside.
Stir together the flour, baking powder and cocoa powder in a large bowl, set it aside.
Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. Add the egg and blend for another 1minute. Add the milk, coffee and vanilla essence in a small bowl and mix it well, then add it to the egg mixture and blend for another 30 to 40sec.


Add the dry ingredients and with the speed on low mix together slowly by making sure not to over mix. Then add the berry's, nuts and tutti frutti and mix everything with a spatula from the bottom to incorporate any bit that wasn't mixed.


Pour the batter into buttered pan and bake for 30 to 31minutes. Allow it cool before taking out from the pan, then cut and sprinkle some icing sugar on top.
Serve as you like..

Merry Christmas!!!! Eggless Mini Bundt Cake.

It's Christmas time again. Merry Christmas to all my blogger friends and readers. Do lots of shopping, cooking and enjoy your holidays... I have made this bundt as i had made the pound cake with little bit of change in ingredient's.. And this bundt also had come out very spongy, this year i'm doing lots of baking, there are many more recipes yet to come, u'll all see it very soon :)


Ingredient's
1+1/2cups all purpose flour
1/2cup butter, room temperature
1/2cups sugar
1cup plain yogurt
1/4cup milk
1tsp vanilla extract
1tsp baking powder
1tsp baking soda
4tbsp dried black grapes and raisin.


For the icing
2tbsp icing sugar
1/2tbsp warm water.


Baking Method
Preheat oven at 350F/180C for 10minutes. Grease and flour the mini bundt cake tin.
In a small bowl blend together the, milk, yogurt and vanilla extract.
In another small bowl sift together the flour, baking powder, baking soda, set aside.
Cream the butter and sugar in a large bowl until it’s light and fluffy. To this mixture, add the liquid ingredients in 3 additions, beating well after each addition.
Now combine the dry ingredients and blend well. Stir in the black grapes.
Pour the batter into the prepared pan and bake for about 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean. I made 6 mini bundt cake from this batter.
Remove the pan from the oven and let it cool on a wire rack. You will be able to remove the cake from the pan in about 10-15 minutes. Keep the cake on the wire rack and let it cool completely.
After the cake completely cooled pour the icing on it..

Merry Christmas...Vanilla & Almonds Muffins

Yooo.... It's Christmas time. Merry Christmas to all my blogger friends and readers. Whenever i think of Christmas, only one thing comes to my mind is lots of colors, celebration , shopping , gifting, baking and baking... This time i have planned to celebrate Christmas very simple, may be i will go out for dinner with my hubby or I will cook something never tried before at home. I am saving my celebration to have blast on New Year eve.


Ingredient
1 cup of all purpose flour
80 gm unsalted butter
1/3 cup sugar
1/3 cup milk
1 tsp vanilla essence
1 egg, 2 pinch of salt
1 tsp baking soda
3 tbsp Almond flakes
2-3 tbsp tooty frooty


Baking Method
Preheat the oven for 10 minutes at 180c. In a large mixing bowl, add butter and sugar. Beat till it becomes light and creamy, add in egg, vanilla essence and milk, mix well till it becomes fluffy. In a separate mixing bowl add flour, baking powder, salt, tooty frooty, mix them together nicely. Now add the mixed flour into the wet ingredients, beat till all the ingredients are combined well.

The batter should not be too thick neither too thin. Grease the muffin cup with butter. Now fill the muffin cups till half with batter and then add a layer of almonds flakes. On top of it add some more batter. Then bake in the preheated oven for 20 to 25 minutes at 180c. Allow it to cool in room temperature for 10 to 15 minutes before taking it out from the tray. Serve warm or cold. In this batter you can make 6 to 8 muffins.
