Chocolate Coated Pistachio Biscotti With Pistachio Dust!

Chocolate Coated Pistachio Biscotti With Pistachio Dust! These are my all time favourite biscotti to bake with, they are easy and last long. Make a big batch of them and store in a airtight container and your evening snacks problem is solved. Its home made, healthy and yummy snack to have anytime of the day.



Ingredient's.
2 cups of plain flour
2 large eggs
1/2 cup butter
1 cup sugar
1tsp baking powder
1tsp vanilla essence
3/4 cup Pistachio.

For Decorating.
1/2 cup melted dark chocolate
1/4 cup pistachio (grind into a course powder).



Baking Method.
Pre-heat the oven 180c for 10 minutes.
In a mixing bowl add flour and baking powder and mix them nicely. roughly chop the pistachio and mix it with flour and set it aside.
In a large mixing bowl, add butter and sugar beat until light and fluffy.
Add the eggs, vanilla essence and beat for another 2 to 3 minutes
Then mix in the dry ingredients and beat until the dry ingredients are well mixed.
On a lightly floured surface roll dough into a log about 14 inches long and 3-4 inches wide. Transfer to baking tray and bake for 35-40 mins.
Remove from the oven and cool on a wire rack for 10 mins.
Then cut into slices 1/2 inch thick diagonally and arrange evenly on baking tray. Bake for 10 mins on each side (until they are firm). Remove from oven and cool.
Once they are well cooled. dip the biscotti into a melted chocolate and sprinkle the pistachio dust on top and allow them to dry for 20 to 30 minutes. 
Store them into airtight container.

Oats Cheese Cake With Britannia Nutrichoice Oats Cookies. Diabetic Friendly.

Healthy version of Oats Cheese Cake made with Britannia Nutrichoice Oats Cookies and honey, which I learnt at Diabetic Food Trail Masterclass. It was so yummy yet healthy and that stole my heart and never wanted to wait for trying this recipe at home with my own twist. Here comes the recipe of oats cheese cake with my own twist and it taste as good as the original recipe and I must say this is an a awesome dessert or breakfast for the health conscious people who might be bored of eating that plain and tasteless food.. Seriously I can't believe that diabetic food also can be made so tasty until I attended this event. A big thanks to Ms.Seema Pinto and Mr.Manoj Pinto for coming up with this diabetic food trail and making those people happy who are banned to eat something sweet.. There are many more recipes coming up which I have learnt in the event.. People do try this healthy cheese cake you'll definitely fall in love as I have.



Ingredient's.
1 cup quicker oats
1/2 cup cream cheese
3/4 cup yogurt
1/2 cup milk
10 Britannia nutrichoice oats cookies
5 tbsp honey (add more if needed)
1/ 2 cup chopped dry fruits (almonds, cashew and pistachio)
1 tbsp strawberry compound.


Method.
In a mixing bowl, add oats, cream cheese, milk, yogurt and 2tbsp honey and give nice mix. Then cover the lid and refrigerate over night or atleast 4 to 5 hours.
Then finely grind the oats cookies and take it out to another mixing bowl, add the 3tbsp honey and make a crumble, (add more honey if needed, for me this much of honey was enough since we don't like much sweet)
Now take serving glass/bowl, add the cookies crumble down and make a base, then take out the overnight cream cheese mixture and add half of the dry fruits and give a quick mix. then pour the mix on top of the cookies base and garnish with strawberry compound and leftover dry fruits. Then put the glasses back to refrigerator for atleast 25 to 30 minutes to set.
Serve chill.

Chocolate Chip Cookies.

Chocolate Chip Cookies. These crispy from outside and chewy from inside cookies are my all time favourite at anytime of the day with cold glass of milk. I have been following this cookies recipe from many years and I bake many types of cookies with a small changes here and there, I just change the flavouring or few ingredients and I always get a best cookies.. Do try my recipe and let me know. Even you can play with ingredients of your choice.



Ingredient's.
1+1/4 cup all purpose flour
1 cup sugar
1/2 cup butter
1/2 tsp baking soda
1 egg
1 tsp vanilla essence
1/2 cup choco chips.


Baking Method.
Pre-heat the oven at 180c for 10 minutes.
Cream together butter, sugar until smooth, then add egg and vanilla, beat for another 40 to 50 seconds.
Then stir in the flour, baking powder and choco chips, then foam a dough. Make a lemon size balls and place it on a greased baking tray and refrigerate for atleast 30 minutes. Take them out after 30 minutes. Now baking them at 175c for 11 to 12 minutes or until the edges are golden brown.
Store them into a airtight container.
Serve them with cold glass of milk.
(NOTE: Refrigerate is must because it gives the evenly baked cookies)

NaanKhatai!! (Indian Eggless Shortbread)

NaanKhatai!! (Indian Shortbread) is the very famous cookies in India. This is the easiest and best cookies to be made in no time and with minimum ingredients. These cookies can be made with gram flour and rawa or even only with maida. Even this naankhatai can be made on cook-top  for that recipe may be you have to wait for my next post.. This is a beginner recipe with only few basic ingredients which I believe every house will have it. This cookies can be stored in a airtight container for a week and you enjoy with hot cup tea... Naankhatai can be a great idea for gifting during Diwali or Holi..Do try this recipe and let me know.



Ingredients.
3/4 cup maida(all purpose flour)
1/4 cup gram flour(besan)
1/2 ghee (clarified butter)
1/2 cup powdered sugar
1/2 tsp baking powder
1/2 tsp cardamom powder.


Baking Method.
Pre-heat oven at 180c for 10 minutes.
In a mixing bowl add maida, besan, sugar, baking powder and cardamom powder and mixing them well. Then by adding little by little ghee, knead a cookie dough. Then divide a dough into 18 equal sized portion. Take a each ball and press in between your palm to give a cookie shape.
Now place the cookies on to greased baking tray and bake them for 12 to 15 minutes at 180c.
Then cool them on to a wire rack and once completely cooled. Store them into a airtight container.
Serve with hot cup tea or warm milk..

Almond Biscotti.

Almond Biscotti. I have tired baking this in India also many times but when I baked the same biscotti again here I don't know some how they taste better and they look better may be because of the different oven. My hubby surprised me by finishing it all in 2days even I ate more then 3 and it was tasting awesome. He was telling me that I have wasted so much of money buying cookies, biscuits from outside, this taste better then that and I would love to have this in my lunch box as a evening snacks... Omg I was on the could nine when he told me that because it is little hard to convince my H when it comes to food.. This yummy and crunchy biscotti which goes very well with tea or a coffee..



Ingredient's.

1tsp vanilla essence
1tsp orange zest
3/4 cup roasted alomnds
1/2 cup black raisin.


Baking Method.
Pre-heat the oven 180c for 10 minutes.
In a mixing bowl add flour and baking powder and mix them nicely. roughly chop the alomonds and mix it with flour and set it aside.
In a large mixing bowl, add butter and sugar beat untill light and fluffy.
Add the eggs, vanilla essence and orange zest beat for another 2 to 3minutes
Then mix in the dry ingredients and beat untill the dry ingredients are well mixed.


On a lightly floured surface roll dough into a log about 14 inches long and 3-4 inches wide. Transfer to baking tray and bake for 30-40 mins. Remove from the oven and cool on a wire rack for 10 mins.
Then cut into slices 1/2 inch thick diagonally and arrange evenly on baking tray. Bake for 10 mins on each side (until they are firm). Remove from oven and cool.
Store them into airtight container.

Pistachio And Lemon Zest Cookies!!!

Pistachio and Lemon Zest Cookies. Last week i was just searching on internet for some good cookies recipe, then i came across with this recipe from Anjana Aunty in Maayeka Blog, I'm a fan of her blog and i follow her blog very sincerely. Pistachio and lemon was a very unique combination for me, without giving second thought i baked this cookies by following her exact steps and ingredients.... The cookies had come out so well and the taste was simply awesome with lemon zest.. Thanks to Anjana Aunty for a wonderful recipe...Everyone loved it in my family...
 
 
 
Ingredient's.
Makes 12 Cookies
Refined flour-3/4 cup
Cornflour-2 tbsp
Baking powder-1 tsp
Salt-1/4 tsp
Soft butter-100 gms
Sugar-1/2 cup
Lemon rind-1/2 tsp
Pistachio-20
Chilled milk -3 tbsp.
 
 
Baking Method.
Mix refined flour,corn flour,salt and baking powder in a bowl and sift together.
In an another bowl mix sugar,butter and lemon rind ,beat and mix well.
Now mix the flour mixture in the butter mixture and mix together.
Add milk(add 1/2 tsp at a time)and make a smooth dough.
Make a roll /log from the prepared dough and keep it refrigerated for 20 minutes.
 
 
 
Take out the roll from the refrigerator and slice it to make medium size pieces.
Dip and gently press one side into crushed pistachios and arrange in a baking tray.
Bake in a preheated oven on 180 degree for 15-20 minutes or till golden in color.
Take our from the oven and let them cool completely.
Store when cooled completely.

Coconut Cookies

Coconut cookies. I use to buy and eat this cookies very often from the bakery near my school. It use to be a little different in shape from this cookies but the taste is same. I still remember those days when i use to go and buy this cookies in my lunch break and eat during the class :) After a long time i ate this cookies again fully satisfied. Now i don't have search for this cookies any where... To know more cookies recipe.


Ingredient's
1/2 graded dry coconut
1/2 cup sugar
2tbsp all purpose flour
1tbsp corn flour
2 cardamom (crushed)
2tbsp melted butter


Baking Method
Preheat oven to 300F/150C for 10 minutes. In a large mixing bowl add all the above ingredients and mix them together nicely, and refrigerate for 10 to 15minutes. So that the dough becomes easy to handle. Then drop dough by teaspoonfuls onto greased baking tray. Bake for about 10 to 15 minutes or until golden brown.
Cool it on the wire rack for them to cool completely. Store these coconut cookies in an airtight container.

Oats And Almonds Cookies..

Oatmeal and oat bran are significant sources of dietary fiber. This fiber contains a mixture of about half soluble and half insoluble fibers. One component of the soluble fibre found in oats is beta-glucans, a soluble fiber which has proven effective in lowering blood cholesterol. Here's how it works. Soluble fiber breaks down as it passes through the digestive tract, forming a gel that traps some substances related to cholesterol, such as cholesterol-rich bile acids. This entrapment reduces the absorption of cholesterol into the bloodstream. Oats and grains are also one of the best sources of compounds called tocotrienols. These are antioxidants which together with tocopherols form vitamin E. Source from Eat More Oats.


Ingredient's
1 cup rolled oats
1/4 cup all purpose flour
1 teaspoon baking powder
1/4 cup chopped almonds
1 egg, 1/3 cup brown sugar
1/4 cup butter, melted
1tsp coca powder
1/2 teaspoon vanilla extract.


Baking Method
Preheat the oven to 175C/375F. Line large baking sheet with parchment paper.
In a bowl, combine egg and sugar and beat until creamy. Add melted butter and vanilla and stir until well combined. Set aside. In another bowl, combine oats, flour, coca powder, baking powder and chopped almonds. Then combine wet and dry ingredients and mix it well.
Drop teaspoons of the batter onto the prepared baking sheet, leaving 2-3 inches space between the drops. Place one full almond on the cookies, (for the better look). Bake for about 10 minutes or until bottoms are golden brown.
Let cool completely on wire rack, before storing in airtight container.

Pistachio & Butter Cookies...

This was the best cookies i have ever made. The taste of pistachio in this cookies was just awesome and so perfectly baked cookies.. I was shocked by eating this cookies, now i have confidence that even i can bake wonderful cookies.. Hope my future childern's will be happy too :)

Ingredient's
All Purpose Flour-1cup
Corn Flour and custard powder- 1/2 cup
Unsalted Butter- 200gms
Icing Sugar-1/2 cup
Vanilla essence-1 tsp
Pistachio- 2tsp (finely chopped)


Baking Method
Preheat the oven to 325F. Line the baking sheet with parchment paper. Beat butter, vanilla and sugar till light and fluffy. Add the flour mixture, pistachio to this and mix. Make a soft dough and set it aside for 15 to 25 minutes. Dust your hands lightly with flour, take tsp full of dough and roll it round with hands, place it on the baking sheet with space for spreading between them and keep 1 pistachio on top of the cookies. Bake cookies for 15 min. Then keep it in the oven until lightly golden. Cool for 5 mins on tray and then on rack. Store in airtight container...

Cashew & Butter Cookies...

This recipe is from Rashmi Mahesh... I must thanks to her for such a easy and lovely recipe. I had baked long time back butter cookies but in a different ingredients.. What i loved in her ingredients is the custard powder which made me to bake this cookies again. I had lost my interest in baking cookies, thanks to her for bringing back that interest in me.. They had come out very well and very tasty too..... 




Ingredient's
All Purpose Flour-1cup
Corn Flour and custard powder- 1/2 cup

Butter Cookies (Celebrating My 100 Posts)

Finally 100 posts since I began the blog. I’ve been amazed at what all has happened since then, so many of you have read and comment on my recipes... Thanks alot for supporting me to complete my 100 recipes. Now i can proudly say to any one that even i know to cook. Still my parents don't believe that i cook delicious food. Though i love to cook but i use to never enter in kitchen, after marriage when i and my hubby went on business trip for 6 months to Seoul , there i was not having much to do on weekdays except reading books that also hardly i use to read..... One day i was just reading a food blog and thought why not do blogging , then i spoke to my hubby even he said good you should start blogging. From there i started my journey of cooking again...... Now i can't resist my self for cooking. Cooking is really a fun specially when everybody eats and appreciate that time i feel very very happy:-)

To celebrate my 100 post, first time i baked butter cookies last night. And they came out very well and they taste delicious...



Ingredients
1 cup butter
1 cup white sugar
1 egg
2 2/3 cups all-purpose flour
1/4 teaspoon salt

1 pinch of baking powder and 1 pinch of baking soda
2 teaspoons vanilla extract

Method
In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour, salt, baking powder and baking soda, mix it well then stir into the sugar mixture.
Preheat oven to 400 degrees F (200 degrees C). Then make a small small cookies and place it on the cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.
