Dal Bukhara | Dal Makhani | Rumana's UK Kitchen.

It's Rich and Creamy black lentil (Black Urad Dal) cooked in Onion and Tomato based gravy with fresh cream and few spices. It is a popular Dal from the BUKHARA (restaurant) kitchen of ITC Maurya, Delhi. Serve with Naan or Rice. X

Ingredients.
1 cup black urad dal
1/4 cup channa dal (optional)
1 medium onion, 1 green chilli, finely chopped
1 inch ginger finely chopped
1/2 cup tomato puree
1tsp ginger garlic paste
2tsp Kashmiri red chilli powder
1/2tsp garam masala
1tsp kasuri meethi
1tbsp Ghee
1tbsp butter
1/2 cup fresh cream
Hand full of chopped coriander leaves
Salt to taste.

Malai Kofta.

Malai Kofta is a very popular North Indian delicacy. Paneer and potato balls deep friend and then added into a creamy onion and tomato gravy, then garnished with cream and Served with naan or Jeera Rice. This is a bit lengthy recipe but I have tried to make it easy as much as possible. Do try this dish and let me know..



Ingredients For Kofta.
2 large boiled potato
250 gram paneer
2 tbsp corn flour
1/4 tsp white pepper
1/2 tsp kasoori methi
1/4 tsp garam masala
Salt to taste
Oil for deep frying.

Ingredients For Gravy.
1 large onion, 2 large tomato, roughly chopped
1tsp ginger garlic paste
8 to 10 cashew
1 tsp red chilli powder, 1 tsp coriander powder, 1/2 tsp turmeric, 1/2 tsp garam masala
1 green cardamom, 2 cloves, 1 small cinnamon stick
2tbsp butter
1/2 cup fresh cream 
Salt to taste.



Cooking Method.
In a deep kadai, add enough oil to deep fry the koftas. Take all the kofta ingredients in a large mixing bowl, mix everything to foam a dough, then divide the dough into small lemon sized balls. Now deep fry them in hot oil. and set it aside.
In a another deep pan, add 1tbsp butter, once the butter is melted, add all the gravy ingredients(except Cream) and cook till everything comes together, then allow the masala to cool. Now grind the cooled masala in to smooth paste.
In a same pan, add another 1tbsp of butter once the butter is melted, add the masala paste and cook for 4 to 5 mintes, Then add the cream and fried koftas, and cook for another 2 to 3 minutes on a medium heat.
Garnish with cream and Serve with Naan.

Dry Fruits And Coconut Kulfi.

Dry Fruits And Coconut Kulfi. Today I'm here with another delicious yet easy kulfi recipe which will leave you speechless after eating this kulfi.. As I have mentioned in my last post that its getting hot in Bangalore and to beat the heat, I just feel like eating kulfi everytime, be it a lunch or dinner. So I'm stocking up my refrigerator with lots and lots of kulfi for upcoming days too.. Since this recipe takes less time and even less ingredients, so why not make and stock up.. Do try and let me know!!


Ingredient's.
1/2 Litre milk
2 pods cardamom
2 tbsp finely chopped almonds, cashews, pista
2 tbsp desicated coconut
2 tbsp fresh cream/malai
1/4 cup sugar.



Cooking Method.
Heat a milk in pan, allow it to boil. Add the cream to the boiling milk. Boil the milk on a medium flame until it reduce to half. keep stirring in between. Once the milk is reduce to half. Now add the chopped dry fruits, sugar and cardamom and allow it to boil for another 5 to 7 minutes.
Then switch off the flame and let the kulfi mixture comes to a room temperature.
Now pour the kulfi mixture into kulfi moulds and cover the top and freeze them for at least 6 to 7 hours or overnight is the best.
Take the kulfi out and by dipping into the water demould the kulfi.
Serve and enjoy.

Almond Matka Kulfi.

Almond Matka Kulfi. The mornings are quite cold but the afternoons are getting hot in Bangalore and to beat the heat why not try this easy bezzy Almond Matka Kulfi and make your children's holiday more special. This kulfi can be made with very less ingredients which every house will have easily in their pantry. Instead of going out and spending money on ice creams, you can make this kulfi at home with no hole in your pocket..That means happy and healthy day with family. Do try and let me know!!



Ingredient's.
1/2 Litre milk
2 pods cardamom
4 tbsp finely chopped almonds
2 tbsp fresh cream/malai
1/4 cup sugar.


Cooking Method.
Heat a milk in pan, allow it to boil. Add the cream to the boiling milk. Boil the milk on a medium flame until it reduce to half. keep stirring in between. Once the milk is reduce to half. Now add the chopped almonds, sugar and cardamom and allow it to boil for another 5 to 7 minutes.

Now pour the kulfi mixture to a washed mud pots (they are also called as a matka) and cover the top with foil paper and freeze them for at least 6 to 7 hours or overnight is the best.
Take the matka kulfi out, Serve and enjoy.

Kaali Dal (Punjabi Style)

Kaali Dal (Punjabi Style) This dal has lots of verities and everybody cooks in their own style though the ingredients are same. Usually kaali dal is made using black gram (kaali urad dal) but I have made using whole masoor dal and whole urad dal and the result was not bad at all. I served it with hot phulkas and jeera rice and my dinner was sorted..


Ingredient's.
1/2 cup whole masoor dal
1/2 cup whole urad dal
1 large onion, 1 large tomato and 2 green chilles (finely chopped)
1/2tsp cumin
1tsp red chilli powder
1/2tsp turmeric
1tsp coriander powder
1/2tsp garam masala
1tsp ginger garlic paste
1tbsp ghee
2tbsp fresh cream or 3tbsp milk
Salt to taste.



Cooking Method.
Soak both the dals for 4 hours.
Pressure cook the soaked dals, ginger garlic paste and salt for about 4 to 5 whistles.
In a mean time, In a deep kadai, add ghee and cumin when they splutter, add the chopped onion and green chillies, fry till the onion get a golden brown color. then add red chilli powder, turmeric and coriander powder, fry for a minute, add the chopped tomato's and cook till the oil separates from the masala. that will take about 5 to 6 minutes. Now add the pressure cooked dal and garam masala and mix them well. adjust the seasoning. Then allow the dal to cook for another 10 to 15 minutes on a low flame. finely garnish with fresh cream and coriander leaves. 
Serve hot with Roti's and Jeera Rice.

Butter Paneer Masala..

Now I understand why new mom's are so exhausted and tired every time... Before 2 weeks my life was so different and now my life is so exciting and busy. I use to finish my household work in the morning and then jump on blog and facebook for whole day till my hubby comes homes.. Now from the time I woke up and till I sleep I'm so busy with my little girl and I don't even have time to check my mails, Facebook nor write blog.. Actually this is what I wanted all this time and now its here... I got some time today and thought to do quick post about my recipe.

Butter Paneer Masala.. This is one of the most famous paneer dish which is served in almost all the Indian restaurant. I had made this dish when I was pregnant keeping this in my mind that I wount be getting time to do anything thing atleast for a month so I had cooked few dishes and draft them and this is the best time to clear off my all draft posts..



Ingredient's.
250gms paneer cubes
4tbsp butter
1 big onion, 2 green chilli (finely chopped)
1 tbsp ginger garlic paste
1cup tomato puree
1 tbsp chilli powder, 1/2tsp turmeric, 1tsp coriander powder, 1tsp garam masala
1/2cup fresh cream
1tbsp kasuri meethi
Salt to taste.



Cooking Method.
Heat 1tbsp butter in a pan, add the paneer and saute till it turns to golden brown in colour.
Remove from the flame and keep aside.
Heat the remaining butter in the same pan, add the onion, green chilli and ginger-garlic paste, mix well and saute for 5 minutes on medium flame.
Add the chilli powder, garam masala, turmeric, coriander, salt and tomato puree, mix and cook for 5 minutes.


Add the paneer and 1/4cup of water and simmer for 4 to 5minutes minutes.
Then add the cream and simmer futher for 2 minutes. Sprinkle the kasuri meethis from top.
Garnished with coriander and Serve hot with Naan, Roti or Jeera Rice..

Masoor Dal Makhni.. (Whole Red Lentil Curry)

Masoor Dal Makhni... After I started cooking this whole masoor dal makhni I totally forgot about the dal makhni... I really feel this dal is more tastier and easier to cook. You don't need to add cream or milk it taste delicious even without any of the heavy ingredient's and gives the same taste as Dal Makhni.. I have tryded even with cream, but I like with out cream or milk.. You can change or add ingredients according to your taste.. Serve with Jeera Rice and Naan and take my words you'll also forget about the other dals...


Ingredient's
1 cup whole masoor dal
1/4 cup rajma
1 medium onion, 1 large tomato, 2 green chillies
1tsp red chilli powder, 1/2tsp turmeric, 1tsp coriander powder, 1tsp garam masala
1tbsp ginger garlic paste
1/2tsp cumin
Hand full of chopped coriander leaves
1/4 cup cream or milk (optional)
Butter 2tbsp
Oil 1tbsp
Salt to taste.



Cooking Method.
Soak the rajma for 3 to 4 hours, then in a pressure cook add whole masoor dal, rajma, salt and 2 cups of water and boil for 4 to 5 whistle on a low flame. After boiled take out from the pressure cooker and set it aside.
In the same pressure cooker, add butter and oil, when hot add cumin, onion and green chillies, fry to golden brown, then add all the masala powder, ginger garlic paste and tomato, fry all the masala till the oil start separating and keep smashing the tomato in between.


Now add the boiled dal and little water if required and give a nice mix, adjust the salt and close the pressure cooker lid and cook for another 2 whistle on a low flame.. Allow the pressure to go completely before opening the pressure cooker. Then mix in the coriander leaves and (cream or milk) give a quick mix and again close the pressure cooker.. Whole Masoor Dal Makhni is ready to serve.
Serve hot with Jeera Rice or Naan..

Smoky Tomato Soup!!!

Smoky Tomato Soup. This recipe i have taken from a GoodFood magazine, and made few changes to taste better.. This soup is very quick to make and yummy to eat.. The original recipe says we have use vegetable stock, but i was not having vegetable stock at home and i was not in a mood to make. So decide to use warm water and it really didn't make any difference the taste was simply awesome... Now i know you can make soup without any kind of stock.... Before when ever i plan to make soup i use to always buy or make stock at home so that i can use for the soup.. But after seeing this result i don't need stock any more... Do try out this recipe and i'm sure you will love it...
 


Ingredient's
1 onion, 1 small carrot, 1 celery sticks, (roughly chopped)
2 garlic cloves, crushed
2tsp smoked peprika
6 medium tomato, chopped
1tbsp tomato puree
300ml warm water
2tbsp double cream
1/2tsp dried oregano
2tsp oil
Salt and Black pepper for seasoning.
 
 
Cooking Method
In a deep fry pan, add oil, when the oil hot, add garlic, onion, celery and carrot, cook till they are soft.
Then add smoked paprika and cook for another 1 minute. Add tomato, tomato puree, oregano and warm water. Season to taste and simmer for 15 minutes.
 
 
 
Then cool it and Whizz in a blender. and pour into same pan.
Now add cream and mix well. Just warm the soup before serving..
Serve warm with an extra swirl of cream and some parsley..

Black Forest Cupcake..

Black Forest Cupcake. In my family usually they love to eat black forest cake, but this time to give a twist instead of making cake i made black forest cup cake... Fortunately on the same day i even got a order for black forest cupcake from my hubby's office. Like there is saying in Hindi "Sona Pe Suhaga" happily i made few extra cupcakes for my family members too, they enjoyed it to the core... This cupcake is filled with cherry's, chocolate and topped with fresh vanilla cream.. this combination is made in heaven, i just love it :)
Preparation time: 10 minutes
Baking time: 20 minutes
Serving: 8to10 cupcakes.
 
 
Ingredient's
1/2cups all-purpose flour
1/6 cup cocoa powder
1tsp baking powder
1/3 cup milk
1tsp vanilla extract
1/4 cup butter
1/3 cup white sugar
1egg, room temperature
1/4 cup ruffly chopped cherry's.
 
 
 
For Frosting
1 cup whipped non dairy fresh cream
1tsp icing sugar
1/2tsp vanilla essence
few cherry's (cut into 2pcs)
1tbsp finely chopped chocolate.
 
 
Baking Method
Preheat an oven to 350 degrees F (175 degrees C). Line 9 cup muffin pans with paper baking cups.
Stir together the flour, baking powder, coco powder in a large bowl, set it aside.
Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the egg and blend for another 1minute.
Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine. DO NOT OVERMIX! Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn't mixed.
Scoop the batter into your lined cupcake tin, make sure it's only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes before frosting.
 
 
 
Method For Frosting
In a chilled small mixing bowl combine whipping cream, sugar, and vanilla. Beat with chilled beaters of an electric mixer on medium speed until soft peaks form. Add the frosting in a piping bag fitted with a large star tip and pipe the frosting onto the cupcakes. Then place the cherry on top of the cream and sprinkle chopped chocolate on top..

Pumpkin Soup..

Pumpkin soup is satisfying and warming and it is a wonderfully comforting soup to enjoy in the winter. There are lots of different recipes for creamy pumpkin soups, depending on what type of soup you want. There are recipes for healthy pumpkin soup, mixed vegetable and pumpkin soup. The list goes on and on. But i liked simple pumpkin soup, with a little touch of Indian taste. Which is healthy and tasty too. Here in india i never find that dark color pumpkin. Most of the time you get to see the lite green color pumpkin, because of that i don't get that beautiful color of pumpkin soup. Anyways that pumpkin also taste the same. Here goes the recipe enjoy :)


Ingredient's
6cups Vegetable stock
4 cups pumpkin puree
1 cup chopped onion 
1tsp chopped coriander leafs
1 clove garlic, minced
1tsp dried oregano 
5 whole black peppercorns 
1/2 cup heavy whipping cream
1tbsp butter, Salt to taste.


Cooking Method
In a deep pan, heat stock, salt, pumpkin, onion, garlic, coriander leafs and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered. Then puree the soup in small batches (1 cup at a time) using a food processor or blender. In a same pan add butter and dried oregano. When the butter in melted. Then add puree and bring to a boil again. Reduce heat to low, and simmer for another 30 minutes uncovered. Stir in heavy cream. Serve Hot.

Grilled Chicken With Mash Potato And Stirfry Vegetables....

From last couple of weeks my Sunday's are generally getting boring in terms of cooking. It seems that i have reached to the saturation of cooking same food and with same ingredients over and over. Usually i get chicken and cook it with Indian chicken masala and spices.So the flavors are almost same irrespective of how much variation i try in cooking with spices and chicken masala.
Last night i tried a new variation of saute vegetable with minimum oil. It was so yum to eat and my husband also liked it very much. So he asked me to prepare tomorrow's lunch with same saute vegetable and combination of chicken and mash potato. I should thanks to him for giving me a wonderful and new idea for preparing such a yummy dish for this Sunday's lunch.


Ingredient's (To Marinate Chicken )
2 chicken breast
1tsp black pepper seeds
1/2tsp mustard seeds
10 garlic cloves
1/2tsp oregano
1tsp white vinegar
1tbsp lemon juice
3tbsp oil and Salt to taste

Cooking Method
Make a small slit on the chicken breast and set it aside. Mix all the above ingredients in a blender (including 2 1/2tbsp oil and salt) and make a smooth paste. Then apply on the chicken breast and keep it in the fridge for 1hour. Now heat a non stick pan with 1/2tbsp oil, and place the chicken breast and fry to golden brown both the side, with close lid.


Ingredient's (For Mash Potato)
3 boiled potatos
50 gram butter, room temperature
1tsp garlic paste
1/2tbsp dried oregano
3tbsp fresh cream
Salt to taste.

Cooking Method
Mash the boiled potato in a large mixing bowl. Then add the garlic, butter, oregano, fresh cream and salt, mix it well and keep it in the fridge.


Ingredient's (For Stirfry Vegetable)
Half cabbage, 1 large carrot, 5 french beans. (cut in to stripes)
1/2tsp soya sauce, 1/2tsp red chilly sauce
Salt to taste
1/2tsp oil.

Cooking Method
In a wok add oil, when it is hot, add cabbage salt and half of the soya sauce and stirfry in a high flame for 3 to 4 minutes, Then in a same pan add carrot, beans, salt, chilly sauce and left over soya sauce, and stirfry in a high fame for 2 to 3 minutes.
