Chutney Chicken Curry!! Pressure Cooker Version

Chutney Chicken Curry this is a very simple and one pot chicken curry. Which you can make in no time and serve with Hot Rice or Roti.. All you need is only few basic ingredients which is easily available in  house and the end result is very delicious chicken curry.



Ingredient's.
1/2kg chicken
Hand ful of coriander leaves
Hand ful of mint leaves
6 green chillies
10 to 15 curry leaves
1tbsp ginger garlic paste
1tsp black pepper
1/2tsp turmeric
2tbsp oil
Salt to taste.



Cooking Method.
In mixing jar, grind all the above ingredients to smooth paste (except oil and salt)
In a pressure cooker, add oil, when its hot, add washed chicken, turmeric and salt, fry for 3 to 4 minutes.
Then add the ground masala and give a quick mix. Close the lid and cook for 2 whistle (1 in high flame and 1 in low flame).
Serve hot with Rice or Roti.

Coconut and Dry Red Chilli Chutney.

Coconut chutney is a very easy and common side dish made in every South Indian households and served with idli, dosa, vadai and even with upma etc. The recipe is so simple and so easy and can be made in no time, there are many variation that can be made in a basic ingredients. Almost every chutney need tempering with mustard and curry leaves, but this recipe no need of any tempering it taste very good without even tempering and this chutney can be served with hot plain rice topped with ghee. Do try out this recipe and enjoy.


Ingredient's.
1 cup chopped coconut
10 dry red chilli
3 garlic cloves
5 to 6 curry leaves
1tsp tamarind paste
Salt to taste.


Method.
Dry roast all the above ingredients.
Then blend everything together with little water to a smooth paste.
Serve with idli, dosa.

Chutney Wala Aaloo.. (Potato With Garlic And Coriander Chutney)

Chutney Wala Aaloo... This is very famous dish in UP and Bihar states in India, almost in every house this would be the morning break fast with pooris... Already I have 2 or 3 posts of different version of this dish, but I cook this often, because of the garlic taste in it.. In my opinion this dish should be eaten when you have nothing to do, just sit in one place and eat. I'm telling you, you will eat more then 4 to 5 pooris with this sabji. Usually my H wants me to cook this on weekends so that he can enjoy slowly and he don't have to rush to office after eating... This can be served as a side dish or even as a starter or snacks..



Ingredient's.
3 medium boiled potato (peeled and cut into big chunks)
4 cloves of garlic
Hand full of coriander leaves
2 green chillies
1/4tsp mustard seeds
1/4tsp cumin seeds
Pinch of turmeric
2tbsp Oil
Salt to taste.



Cooking Method.
In a blender, add garlic, coriander leaves and green chillies and grind it to a smooth paste, by adding little water.
In a deep frying pan, add oil, mustard and cumin, when they splutter, add grounded paste and turmeric and fry for 2 to 3minutes. Then add turmeric and salt, fry for another few sec.


Now add the boiled potatoes and mix them gently and cook till the potato are mixed well with everything, that will take about 3 to 4 minutes.. Sprinkle some more chopped coriander leaves on top.
Serve hot with Pooris, Roti's or as a Starters.

Plain Dosa!!

Plain Dosa. I like dosa a lot, because it is easy to cook and delicious to eat. This is a regular dosa variety which is prepared in every south Indian houses but with some of my touch and tricks which helps in keeping the dosa soft for a long time. If you ask me to describe a perfect dosa, I would say that 'Dosa should have red crispy crust without a single white spot and a soft and porous white interior. But everybody can't make the perfect dosa, i have tried my best to get the crispy and perfect dosa. This is the simple and easy recipe with easily available ingredient's..


Ingredient's
3/4 cup raw rice
1/4 cup urad dal (split black lentils)
2 tbsp cooked rice
2 tbsp poha (beaten rice)
1/4tsp fenugreek seeds
Oil for frying
salt to taste
Butter for serving.


Cooking Method
Wash the urad dal, raw rice and methi seeds. Soak in a little water along with the poha and cooked rice for at least 2 hours.


Grind to a smooth paste with a little water. Cover and keep aside for at least 4 hours. Add salt and mix well.
Heat a non-stick tava and grease lightly with oil. when hot, sprinkle a little water, pour a ladle of batter, spread it around, into a thin crepe and cook on one side.


Pour a little oil along the edges while cooking. When crispy, fold and serve hot with Sambar and Chutney.
Repeat for the remaining batter.

Mint & Curd Chutney... (Mint & Curd Raita)

Mentha Piperita (usually known as Peppermint). King of all mints. The potent taste of the leaves very strong menthol takes your breath away. Very cool and clean indeed. Peppermint is the mint that is most often used commercially in liqueurs, toothpastes, soaps, and mouthwashes because of its strong, pure qualities. In medicines, it is used not only as a pleasant flavoring, but also because it contains healing properties as well. Mint has been known as both a seasoning and a medicine for centuries. It is also being used for rubbing since the very early stages of human evolution.... Check out some more recipe's of chutney's.


Ingredient's
1 cup Mint leafs
1/2 cup Coriander leaves
2 Green Chilies
1 onion (finely chopped)
4 Tbsp Curd
Salt to taste

Making Method
To make the chutney just combine all the ingredients and blend in food processor. Mix in the finely chopped onion. And serve with anything which ever dish you like..

Tamarind, Mint and Fennel Chutney

Fennel Seeds (Sauf) are very effective for digestive problems. These seeds can be chewed upon or had as a tea decoction for beneficial effects upon the stomach. In India, these are routinely chewed upon after meals to aid in digestion after a rich meal while acting as a herbal mouth freshener.Fennel seeds often provide quick and effective relief from many digestive disorders. They help to overcome gas, cramps, acid indigestion, and many other digestive tract maladies. Making this chutney is very very easy and one of my all time favorite chutney, u can make this chutney and store in the fridge for atleast 2 to 3 weeks. it goes with every thing, i love to eat with plain rice when ever i am lazy to cook. and it is one of the best chutney what i feel.


Ingredient's
1 bunch of mint leafs
1 small size ball tamarind
3 green chillies, 3 stems coriander leafs,5 to 6 curry leafs and 1 small onion
1/2tbsp cumin seeds, 1tbsp of funnel seeds
Salt to taste.

Making Method
Grind all together in a mixture grinder to smooth paste, add salt in the last.
Remove in a serving bowl and Serve with any thing which u like.. specially with Roti and Dosa.

Tamarind Chutney

A tropical Asian evergreen tree (Tamarindus indica) having pinnately compound leaves, pale yellow flowers, and long pods containing small seeds embedded in an edible pulp. 
The tamarind tree produces brown pods that are 2 to 6 inches(5 to 16 centimeters) long. The pods contain an acidic pulp that may be eaten fresh or used to make food, jams, sauces, syrups, and drinks. The seeds of the tamarind may be roasted and eaten. The tamarind grown as a shade tree in southern Florida, U.S.A.:-)
Tamarind chutney is very tasty and very very easy to prepare it goes with every thing, like dal chawal, roti, paratha, dosa etc...


Ingredient's
250g tamarind 
4 green or red chillies 
1/2 cup chopped coriander leafs 
1/2 cup chopped puddina leafs 
6 to 8 curry leafs 
1/2 onion chopped 
5 cloves garlic 
1tbs cinnamon seeds 
1/2 tbs black pepper seeds 
Salt to taste .

Preparation
Wash tamarind in hot water 
Add all the ingredients, tamarind and salt in grinder, and grind to a smooth paste 
Garnish with coriander leafs 
Serve with anything as a side dish.
