Bundt Cake .. In My Style!!! (Eid Special)

Bundt Cake, this was my dream to bake this cake from a long long time but never had confidence. Last week i was just going through few blogs, from there i got this recipe and i got the confidence to give it a try. I have changed few ingredients and the measurement to this bundt cake original recipe, and it was the best cake i have ever made. Though this was my first attempt to bake this bundt cake, believe me i was shocked by the results. Thanks to the people who made this bundt cake and also gave me the confidence to bake this very difficult cake.. Here is the recipe for you all...


Ingredients
2 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup unsalted butter, melted
1 1/2 cups sugar
1 large lemon and lemon zest
4 large eggs.


For Glaze on top 
1 cup confectioners' sugar
1 to 2 tablespoons water.


Baking Method
Preheat oven to 350 degrees. Make the cake. In a medium bowl, whisk together flour, cinnamon, baking powder, salt, and baking soda.
In a large bowl, combine butter, brown sugar, eggs, lemon juice and zest. Whisk until smooth. Gradually whisk in dry ingredients just until combined (do not overmix). Pour the batter in to the prepared bundt cake pan and smooth top.


Bake until a tester inserted in cake comes out clean, about 50 to 60 minutes. Cool in pan on rack 15 minutes, invert onto rack to cool completely.
Make the Glaze. Whisk together confectioners' sugar and enough water to form a thick yet pourable glaze. Set rack with cake over a piece of wax paper (for easy cleanup) drizzle cake with glaze, and allow the glaze to set before serving. Cut into pices and serve with some whipped cream or as it is.

Chakli...



Ingredient's
2cups rice flour 
2tsp Urad dal flour
1tsp sooji (Rava)
1tsp maida 
2tsp melted butter
1/4 tsp Asafoetida powder
1/2tsp black and white sesame seeds
1/2tsp cumin
Salt to taste
Water as per reqs
Oil for deep frying.


Cooking Method
Mix all the ingredients in a bowl. Adding water little by little, form a stiff dough. 
Take the 1 star attachment and fix it to the maker. Alternatively take a plastic sheet lightly brushed with oil/butter.


Now take a small amount of dough and place it inside the maker. Press the dough on the plastic sheet and you will find the dough coming out shaped as per the one star attachment.
Slightly rotate the maker round and round until you make a circle. Press it until a sufficient amount has dropped into the oil and break off the rest of the dough from dropping - just stop pressing the maker.


Now fry them until done - You can make it red, light brown or golden as per preference.
Drain them on paper towels. Let them cool and store in air tight containers.

Orange Muffin's..

Muffin is an American English name for a type of quick bread that is baked in small portions. Many forms are somewhat like small cakes or cupcakes in shape, although they usually are not as sweet as cupcakes and generally lack frosting. They may be filled with sweet fillings, such as chocolate, orange, toffee, lemons, or blueberries. I have tried with orange and the muffin has come out very tasty and beautiful...


Ingredients
3 eggs
1 large orange pulp 
1/2 cup sugar
1 1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon vanilla essence
1/4 cup milk
1/2 cup butter (room temperature)


Baking Method
Preheat oven to 350 deg F (180 deg C).
Grease muffin tins (paper muffin bake cups are recommended) or 12-15 medium cups.
In a bowl mix flour and baking powder together and keep it aside
In a different bowl beat the butter with sugar till fluffy, then add eggs, beat for 1minute. Now add vanilla and milk. beat for another 1 minute. Then fold in the flour mixture and orange pulp mix it nicely.


Then pour the mixture into a grease muffin tins and bake at 350 degrees, until a wooden pick inserted in center comes out clean, about 30 minutes for XL muffins, about 20 minutes for medium size muffins. The Orange Muffins may be served hot or at room temperature.

Choco Banana Muffins..



Ingredients
2 eggs
1 large banana
1 cup sugar
1 cup all-purpose flour
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon vanilla essence
1tsp sesame seeds (for sprinkling on top)
2/3 cup milk
2/3 cup (150 g) butter (room temperature)


Baking Method
Preheat oven to 350 deg F (180 deg C).
Grease muffin tins (paper muffin bake cups are recommended) or 12-15 medium cups.
In a bowl mix flour, cocoa powder and baking powder together and keep it aside
In a different bowl beat the butter with sugar till fluffy, then add eggs and banana. beat for 1minute. Now add vanilla and milk. beat for another 1 minute. Then fold in the flour mixture and mix it nicely.
Then pour the mixture into a grease muffin tins and sprinkle sesame seeds on top. Bake at 350 degrees, until a wooden pick inserted in center comes out clean, about 30 minutes for XL muffins, about 20 minutes for medium size muffins. The Chocolate Muffins may be served hot or at room temperature.

Madeira Cake!!!

Madeira cake is a sponge cake in traditional English cookery. The Madeira Cake has a firm yet light texture, eaten with tea or rarely for breakfast and is traditionally flavoured with lemon. Dating back to an original recipe in the 18th century or 19th century, it is not unlike a simple pound cake or yellow cake. The Madeira Cake is sometimes mistakenly thought to originate from the Madeira Islands; however, that is not the case as it was instead named after the Madeira wine, which was popular in England at the time and was often served with the cake. Nowadays, it is often served with tea or liqueurs. (Source from wikipedia)


Ingredient's
Softened Unsalted Butter - 1 cup
Fine Grain Sugar - 3/4 cup (plus 1 tablespoon for sprinkling)
Lemon - 1 (Grated Zest and Juice)
Eggs - 3 large
Self Rising Flour - 1 and 1/3 cup
All Purpose Flour - 1/2 cup
Baking Powder - 1/4 teaspoon
9 x 5-inch Loaf Pan - Buttered and Lined


Cooking Method
Get all the ingredients at room temperature before starting. Preheat the oven to 180 degrees C.
Sift the self rising flour, all purpose flour and baking powder, together, Thrice and keep aside. Cream the butter and 3/4 cup sugar using an electric beater. Once they are well creamed, grate in the zest of the lemon. Beat well till it is combined.


Add the eggs one at a time with a tablespoon of flour for each. Beat well after each addition. Once all the 3 eggs are in, and the mixture is well beaten, gently FOLD IN, with a wooden spoon, the rest of the flour in small batches. Finally put in the juice of the lemon. Mix well with the spoon and pour the batter into the prepared tin. Sprinkle the top with sugar as it goes into the oven.


Bake for 1 hour or until a tester comes out clean (mine got done in just under 50 minutes. I suggest you check after 45 minutes to prevent any burns. Remove the tin to a wire rack and let cool in the pan before turning out.

Coconut Cookies

Coconut cookies. I use to buy and eat this cookies very often from the bakery near my school. It use to be a little different in shape from this cookies but the taste is same. I still remember those days when i use to go and buy this cookies in my lunch break and eat during the class :) After a long time i ate this cookies again fully satisfied. Now i don't have search for this cookies any where... To know more cookies recipe.


Ingredient's
1/2 graded dry coconut
1/2 cup sugar
2tbsp all purpose flour
1tbsp corn flour
2 cardamom (crushed)
2tbsp melted butter


Baking Method
Preheat oven to 300F/150C for 10 minutes. In a large mixing bowl add all the above ingredients and mix them together nicely, and refrigerate for 10 to 15minutes. So that the dough becomes easy to handle. Then drop dough by teaspoonfuls onto greased baking tray. Bake for about 10 to 15 minutes or until golden brown.
Cool it on the wire rack for them to cool completely. Store these coconut cookies in an airtight container.

Stuffed Onion Paratha (Indian Flatbread Stuffed With Onion)

Onion Paratha the very delicious and easy to make paratha in the paratha's categories. When we talk about stuffed paratha's most of the people says aaloo paratha in south India. Because they don't know what all the veggie's we can stuffe and make paratha. These days I'm also trying to make paratha's in differnt different veggie's for our weekends breakfast.. In future may be you all see me posting more paratha's recipes. because i have many recipes yet to be post... And my goal is to tell people that you can cook anything when you decide to do it. :)


Ingredient's
2 cup wheat flour
Salt to taste
Water to make a dough

For Stuffing:
3 onions, very finely chopped
1 green chilli, very finely chopped
½ tsp red chilli powder
½ tsp coriander powder
½ ajwain
½ tsp salt to taste


Method
Combine the flour and salt, knead into soft and pliable dough with sufficient water. Knead the dough till it is smooth and elastic. Cover and keep aside in an airtight container for one hour. In a large mixing bowl add chopped onion, green chillies, red chilli powder, coriander powder, ajwain and salt, Mix them all together nicely and set it aside.


Then divide dough into 4 - 5 lemon sized balls ( bigger than the dough required for normal chapati ) and flatten it. Place 1 tablespoon onion filling in each dough, cover them to a ball and roll out an a flat surface like a paratha. Sprinkle dry flour when making parathas.

Heat a flat frying pan or griddle. Reduce heat to medium and cook parathas till golden brown, on both the sides. Apply oil on both sides. Serve hot with pickle / curd / butter.

Oats And Almonds Cookies..

Oatmeal and oat bran are significant sources of dietary fiber. This fiber contains a mixture of about half soluble and half insoluble fibers. One component of the soluble fibre found in oats is beta-glucans, a soluble fiber which has proven effective in lowering blood cholesterol. Here's how it works. Soluble fiber breaks down as it passes through the digestive tract, forming a gel that traps some substances related to cholesterol, such as cholesterol-rich bile acids. This entrapment reduces the absorption of cholesterol into the bloodstream. Oats and grains are also one of the best sources of compounds called tocotrienols. These are antioxidants which together with tocopherols form vitamin E. Source from Eat More Oats.


Ingredient's
1 cup rolled oats
1/4 cup all purpose flour
1 teaspoon baking powder
1/4 cup chopped almonds
1 egg, 1/3 cup brown sugar
1/4 cup butter, melted
1tsp coca powder
1/2 teaspoon vanilla extract.


Baking Method
Preheat the oven to 175C/375F. Line large baking sheet with parchment paper.
In a bowl, combine egg and sugar and beat until creamy. Add melted butter and vanilla and stir until well combined. Set aside. In another bowl, combine oats, flour, coca powder, baking powder and chopped almonds. Then combine wet and dry ingredients and mix it well.
Drop teaspoons of the batter onto the prepared baking sheet, leaving 2-3 inches space between the drops. Place one full almond on the cookies, (for the better look). Bake for about 10 minutes or until bottoms are golden brown.
Let cool completely on wire rack, before storing in airtight container.

Merry Christmas...Vanilla & Almonds Muffins

Yooo.... It's Christmas time. Merry Christmas to all my blogger friends and readers. Whenever i think of Christmas, only one thing comes to my mind is lots of colors, celebration , shopping , gifting, baking and baking... This time i have planned to celebrate Christmas very simple, may be i will go out for dinner with my hubby or I will cook something never tried before at home. I am saving my celebration to have blast on New Year eve.


Ingredient
1 cup of all purpose flour
80 gm unsalted butter
1/3 cup sugar
1/3 cup milk
1 tsp vanilla essence
1 egg, 2 pinch of salt
1 tsp baking soda
3 tbsp Almond flakes
2-3 tbsp tooty frooty


Baking Method
Preheat the oven for 10 minutes at 180c. In a large mixing bowl, add butter and sugar. Beat till it becomes light and creamy, add in egg, vanilla essence and milk, mix well till it becomes fluffy. In a separate mixing bowl add flour, baking powder, salt, tooty frooty, mix them together nicely. Now add the mixed flour into the wet ingredients, beat till all the ingredients are combined well.

The batter should not be too thick neither too thin. Grease the muffin cup with butter. Now fill the muffin cups till half with batter and then add a layer of almonds flakes. On top of it add some more batter. Then bake in the preheated oven for 20 to 25 minutes at 180c. Allow it to cool in room temperature for 10 to 15 minutes before taking it out from the tray. Serve warm or cold. In this batter you can make 6 to 8 muffins.

Steamed Chicken Momo's

Every time I see momos on a restaurant menu, I order them without a second thought. Some how i feel momos are the best food to eat. And i was not knowing it is very easy to make also and after a bit of hobnobbing around on the net, I found my recipe. So finally I try at home, Chicken Momos is a delicious snack which can be steamed as well as deep fried. But i always prefer steamed momos.. You might also like some more recipes of Chicken..


Ingredients For Dough
2 cups flour
Salt to taste
Water


Ingredient For Filling
1/2 kg chicken mince
1 large onion, 8-10 cloves of garlic chopped very fine
1 tbsp chilli sauce
1 tsp freshly ground pepper
Salt to taste
3 tbsps oil


Cooking Method
Mix the flour and salt to taste and add a little water at a time to make a stiff dough. In a large mixing bowl, add all the filling ingredients and mix them nicely. Divide the dough into equal-sized balls and roll into very thin circles of roughly 4" diameter. Dab a tiny bit of water on the edges of the circle. Put a tablespoon-full of filling mixture in the centre of each circle. Fold the edges over the mixture and pinch and twist to seal or fold the Momo in half (into a semi-circular shape) and pinch the edges shut. Get as creative as you like with shapes, as long as you make sure to seal the edges well. Place the Momos in a steaming dish and cook for 10-15 minutes. Serve hot hot with tomato sauce or chutney.

Chicken Lollipop!!!!

Many a times while eating chicken lollipop in restaurants i always had this question in my mind -"How do they cook?" Recently while shopping in Reliance fresh i saw the frozen chicken lollipop and that time only i decided to cook and surprise him. As always he was fully surprised... Do try this simple recipe and let me know how was it tasting..

Ingredient's
6 chicken lollipop
1tsp red chilly powder, 1/2tsp turmeric, 1/2tsp coriander powder
1tbsp ginger garlic paste, 2tbsp lemon juice, 2tbsp maida
Bread crumbs (for coating)
Salt to taste
Oil for deep frying


Cooking Method
Wash and keep the chicken aside. In a mixing bowl add all the masala powder, ginger garlic paste, lemon juice and salt, make a thick paste. Then add the chicken lollipop and mix it nicely. Keep in the fridge for atleast 1hour. Before frying coat the lollipop with bread crumbs. Then add enough oil in a deep frying pan and fry the lollipop to golden brown...
Serve hot with tomato sauce.

Cumin & Potato Paratha (Indian Flat-bread)

I had cooked these paratha's long back but never got time to post it. When i was going through my recipe picture which are yet to be posted, i saw this paratha which still has not got its turn. I think this is the right time to post this recipe because tomorrow is Monday and will not cook something which takes lot of time. To save the time i will need something very easy and a quick recipe. All ladies here is the solution for tomorrow's breakfast. It is very very easy to cook and serve some delicious breakfast and for children's lunch box too. It had come out very tasty and delicious. You might also like to try these similar recipe of Parathas.. 


Ingredient's
2 medium size Potato
2tbsp cumin seeds
2 green chillies (finely chopped)
1tbs of Turmeric powder, 1tbsp red chilly powder, 1/2tbsp coriander powder
2 cup of flour
Oil and Salt as per taste


Cooking Steps
Boil potato for 10 to 15minutes, it should be well cooked so it is easy to mash. Heat oil in frying pan, add cumin seeds and green chilly, fry for few sec. Then add all the masala powder, mash potato and salt then fry for 3min and keep it aside. Prepare dough using flour and water, make 1 small size of roti and fill the stuffing and close it gently. Then roll it over slightly to make a round shape. Put paratha in a pre heated pan and cook it both the side using oil. And paratha is ready to eat.
Serve it hot hot with curd and pickle.
