Cholle Curry Chat..

Cholle Curry Chat.. This is a new innovation of chat with leftover cholle curry. We always eat cholle with poori or with pulao only, so why can't we try out with something else keeping that in my mind I tried this chat and I was amazed with the taste. Just by adding little onion, green chilli, tomato and punjabi masala mixture. It took the cholle masala to some other level and now I will be keep making this when ever I cook cholle curry.. Ingredients.
1 bowl of cholle curry (Fresh or Leftover)
1 small onion, 2 green chilli, 1 small tomato (finely chopped)
1/4cup of any mixture (I used punjabi masala mixture)
1tbsp finely chopped coriander
1/4tsp chat masala
1tsp lemon juice.


Method.
In mixing bowl add onion, green chilli, tomato, coriander, lemon juice and chat masala. Mix everything together.
In another small bowl, take cholle curry, from top add the onion and tomato mixture and sprinkle with masala mixture.
Cholle curry chat is ready.
Serve immediately.

Dahi Vada.. (Curd And Lentil Vada With Tangy Tamarind Chutney)

Dahi Vadas are lentil dumplings topped with a spicy savory yogurt and tamarind chutney. These are great as a side dish on any occasion or served as a chat too.. This dahi vada was made by Nupur my friend on Diwali day in a different way and with different ingredients... I use moong dal to make dahi vade but she made it with urad dal, exactly the way we cook medu vada. It was very good and I'm happy to know one more recipe of dahi vada..


To be honest I'm not a great fan of dahi vada, because of that only I use to avoid cooking.. But this time it was totally opposite because of the tamarind chutney, I ate 2 dahi vada with lots of tangy tamarind chutney and chat masala.. It was awesome and I have a plan to cook it again in some time... Thanks to my friend Nupur for a such a yummy dahi vada recipe..


Ingredients For Vadas.
1 cup urad dal
Oil for deep frying.

Ingredient's For Curd.
1 1/2 cup yogurt
3tbsp milk
1tsp salt
1/2tsp roasted cumin powder.

Ingredient's For Tamarind Chutney.
1cup tamarind pulp
2tbsp sugar
3/4 cup jaggery
1/4tsp red chilly powder
1/2tsp roasted cumin powder
Pinch of salt.


Cooking Method For Tamarind Chutney.
In a heavy bottom pan, add all the ingredinets of tamarind chuteny and cook on a low flame, till tamarind pulp becomes semi thick and dark in color.. That will take about 30 minutes. (keep stirring in between to avoid sticking at the bottom) When it is done take out in a bowl and allow it to cool.


Cooking Method For Vada.
Wash urad dal several times until the water appears clear and soak it over night.
Drain the water and blend dal to very creamy texture. Just using enough water as needed to blend. 
Whip dal batter using a spoon in a circular motion for about two to three minutes until batter become light and fluffy. If needed add few spoons of water.
In a deep frying pan add oil and allow oil to become hot on medium flame. To check if oil is ready put a little batter into the oil, oil will sizzle and batter should start expending upwards slowly without changing color.
Then place a plastic sheet on to a flat surface and apply little water, then put 2tbsp batter on to plastic sheet and slowly flatten the vada and make a small hole in a centre. Take the plastic sheet slowly up and leave the vada into hot oil for frying. Fry until they are golden brown and fry the vadas in small batches
After you have made all of the vadas, place the vadas in luke warm water and soak for about 20 minutes.
Next squeeze the vadas gently to take out the water, be careful not to break the vadas.

To make Yogurt topping and Garnish.
In a large mixing bowl take yogurt, milk and mix until very smooth. add salt and cumin powder give a good mix.
Then soak all the vadas in the yogurt for at least twenty minutes, giving the vadas time to absorb the yogurt.
Slowly pick up each vada and transfer into a serving dish, pouring a few spoons of extra yogurt all over the vadas.
Just before serving, sprinkle red chilly powder and chat masala finish off with a drizzle of tamarind chutney.

Masala Potato Chips (Home Made)

Masala Potato Chips. Who don't like potato chips, I think it is favorite of all. There is a potato chip store near my apartment and every time crossing it, i couldn't stop myself from thinking "how do they make it so tasty". One day i asked the person who works there, what all you add to make chips so tasty. He said you can stand here for few minutes and then see what we add... Then i was eagerly waiting there for couple of minutes to see what he adds. I kept staring him without even blinking my eyes, thinking that if i close my eyes then he will add something. But he added nothing except salt water. I was surprised by seeing that, just by adding salt water to frying potato they make chips so tasty.... I had no words to say, i just said "thank you" for telling me your secret... I had often tried making potato chips, but i use to add salt after frying, because of that only i never got that wonderful taste like chip stores.
I followed the same method what he had showed me and my chips were crispy and tasting exactly the way i get it from him... I added red chilly powder and chat masala to make it little chat patta.. This is a very simple method to make it at home and get the taste of store and healthy too... When you can make it at home why to buy from out..



Ingredient's
5 medium potato
1tbsp salt
1/2ltr oil
1/4tsp red chilly powder
1/8tsp chat masala.



Cooking Method
Peel and soak the potato in cold water for 10minutes. 
Then slice the potato in slicer and again soak them in cold water for at least 15 to 20minutes. (Soaking potato in cold water helps to remove the starch and make the chips more crispy)
In a small bowl add salt and 2tbsp water and dissolve salt completely and set aside. 
In a deep frying pan, add oil, when oil is hot, deep fry the potato, when they are half done then sprinkle few drops of salt water. Fry chips to lite golden brown. (fry them in batches)


Then take them out on a paper towel and sprinkle red chilly powder and chat masala, and mix them gently and allow them to cool completely..
Then you can store them in a air tight container for a week.
Masala Potato Chips is ready..

Aaloo Mutter Chat

This is a very simple and easy recipe. And it goes very well with plain paratha's, i can say this recipe is my hubby's favorite by smelling it only he says ohh mutter chaat. I cook this chaat specially on weekends so that he can eat peacefully. Who don't want to eat favorite food on weekends :)



Ingredient's
1 large potato, cut in to small pieces
2 cup boiled Mutter
1 medium onion, 2 green chilli, and 2 tomatoes, finely chopped
Ginger garlic paste 1tbsp
Coriander leaves 1/2cup
Chilli powder 1tsp, coriander powder 2tsp, Garam masala 1/2tsp
Turmeric powder 1/4tsp, mustard seeds 1/2tsp
Chat masala 1/4tsp
10 curry leafs
Salt to taste
Water as req.

Cooking Method
Heat a pressure cooker and add oil, mustard seeds, and curry leafs, when they splutter, add onion and green chilli, saute to golden brown then add ginger garlic paste,tomatoes,chilli powder,coriander powder,garam masala, turmeric powder,salt and cook for 3 to 4 minutes.Then add potato and mutter, mix it well then add chaat masala and water. Then close the pressure cooker lid and cook for 3 to 4 whistle. Remove from heat and garnish it with coriander leaves.
Serve with Plain Paratha's.
