Baked Tilapia Fish With Tomato Gravy/ Meen Pollichathu.

Baked Tilapia Fish With Tomato Gravy. This is a very famous kerala dish called Meen Pollichathu. Meen Pollichathu is basically fish covered with a spicy masala and wrapped in banana leaves and shallow fried. But since I did not find banana leaves here, so I wrapped it with foil paper and baked it to give a healthier touch. And I have made a little changes in masala too by adding more tomato's to have a little gravy. It is all up to us to add or remove the ingredients according to our taste and it taste as good as the traditional dish. This can be served with rice, roti and even as a side dish.


Ingredient's to marinate the fish.
1 Medium size Tilapia fish
1/2tsp red chilli powder
1/4tsp turmeric
1/2tsp coriander powder
1/2tsp ginger garlic paste
1/4tsp black pepper powder
Salt to taste
1tsp oil.



Ingredient's for the gravy.
1 onion, 2 green chilli, 2 large tomatos (finely chopped)
1/2tsp red chilli powder, 1/2tsp turmeric, 1/2tsp coriander powder
1/2tsp garam masala
1/2tsp mustard seeds
2tsp lemon juice
1tsp ginger garlic paste
10 curry leaves
2tbsp thick coconut milk
2tbsp chopped coriander leaves
Salt to taste
2tbsp oil.


Cooking Method.
Clean the fish. Make gashes on both the sides.
Add all the marinated ingredients into a mixing bowl and make a thick paste by adding little water. Then apply it nicely on the fish and set it aside for atleast 30 minutes.
In a tava add oil and fry the fish both the side for a minute or 2.
In a deep frying pan, add oil, when oil is hot, add curry leaves and mustard seeds, when they splutter, add onion, green chilli and fry to lite brown.
Add red chilli powder, turmeric, coriander powder, garam masala and ginger garlic paste and fry for 1 minute. Then add chopped tomato's, coconut milk, coriander leaves, lemon juice, salt and cook till the tomatoes are well cooked. Allow the masala to cool.
In a mean time pre-heat the oven at 200c for 10minutes.
Take a large foil paper, spread some masala on it. Place the fish over the masala and spread some more masala over the fish.
Fold the edges and secure. Then baked the fish for 10 to 15minutes.
Serve hot with Rice, Roti or as a Side Dish.

Tilapia Fish Curry/Kerala Style.

Tilapia Fish Curry. Fish is an integral part of Kerala Cuisine. There are hundreds of variations for Kerala Fish curry. The main part of this curry is coconut and tamarind sauce this curry can be cooked with any fish and it will taste great. To cook this curry the main reason was I got the Indian tilapia fish, there is a new shop has opened near my house who sells even all the Indian fishes, like rohu, mackerel, tilapia etc. and I'm so so happy now I even get to taste Indian fish without even being in India.. This spicy and tangy curry goes so well with plain rice and this was our last Saturday's lunch and we enjoyed it thoroughly. Do cook this curry and make your family happy..


Ingredient's.
2 tilapia fish (cut into 2 pieces)
8 to 10 curry leaves
2 green chilli
4 garlic garlic cloves
1/4tsp mustard seeds
1/2 cup coconut milk
2 tbsp tamarind paste
1tsp red chilli powder, 1/2tsp turmeric, 1tsp coriander powder
3tbsp oil
Salt to taste.


Ingredient's to make a paste.
2 medium tomato
1 medium onion
2tbsp chopped coriander leaves
1tbsp ginger garlic paste
1/4tsp cumin seeds.



Cooking Method.
Wash the fish thoroughly and set it aside.
Grind the onion, tomato, coriander leaves, ginger garlic and cumin to a smooth paste.
In a deep frying pan/kadai, add oil, when oil is hot, add curry leaves, mustard, green chilli and garlic cloves. when they start turning brown. Add the ground paste, red chilli powder, turmeric and coriander powder, fry till the oil starts separating.
Then add coconut milk, tamarind paste, salt and 2cups of water and allow it boil for a minute or 2. Then add the fish and simmer the curry for 5 to 6 minutes.
Serve hot with Plain Rice.

Pink Prech Fish Curry With Coconut..

Pink Prech Fish Curry.. This fish curry can be cooked with any kind of fish which finds in the market. In my mom's place they usually cook this curry with a Rohu fish that also taste very good. I had in my mind to cook fish curry from few days, i went to buy fish from a shop, but he was not having rohu fish. He only had Pink Prech, Mackerel etc. I thought for a minute then i decided to buy pink prech fish only and cook the same way how i use to have before...
 
 
During summer vacation we mostly use to visit my granny's place Mysore. As soon as my grand father comes to know we reached home, while coming from his work he use to carry lots of Pink Prech, Rohu and Mackerel fish. My mom granny and aunty's use to cook this fish curry for the dinner. Still can't forget those days, some time i feel like i should go back to those days again...
 
 
 
Ingredient's
3 pink prech fish (clean and wash)
1 large onion, 5 steam of coriander
2 large tomatos
1/4 cup coconut paste
3tbsp tamarind paste
1tbsp ginger garlic paste
1tsp red chilly powder, 1tsp coriander powder, 1/2tsp turmeic
3tbsp oil
Salt to taste.
 
 
Cooking Method
Grind the onion, tomato and coriander to a smooth paste, and set it aside.
In a deep frying pan, add oil, when oil is hot, add grind paste, and coconut, fry for 1 to 2 minutes, then add turmeric, red chilly powder, coriander powder and ginger garlic paste. and give a quick mix to all the masala.
 
 
Now add the fish and stir very gently. Season with and add tamarind paste and 2cups of water, again mix it very gently and close the lid and cook on low flam till the fish is cooked..
Serve hot with plain Rice..

Mackerel Fish Fry!!!

Mackerel Fish Fry. Mackerel fish is a flavorful, firm-fleshed fish that is easy to cook, low in fat and full of nutrients. This fish is one of my very favorite, though i cook very less because of the smell, my hubby don't like this fish smell while cooking. So when ever i feel like having this fish i make it in the afternoon and wash all the dishes and spray room freshener at home, so that when he comes home there is no smell at all. Most of the time he will not know only, i had fish in the afternoon until unless i tell him.... This is one of very very easy fish fry, you can use any fish it will taste awesome and you don't need to marinate for hours. This fish will not take your precious time and yet gives you the best and delicious taste...



Ingredient's
3 mackerel fish (washed and slit on the top)
3tbsp red chilli powder
1tbsp lemon juice
1tbsp ginger garlic paste
3 to 4tbsp water
Salt as per taste
2tbsp oil for shallow frying.


Cooking Method
In a mixing bowl add all the ingredient's (except oil) and make a medium thick paste.
Then apply thoroughly on fish and keep in the fridge for 4 to 5 minutes.


In a hot frying pan add oil and shallow fry fish to golden brown, both the side.
Now hot fish is ready to serve. Serve hot as a side dish.

Silver Pomfret Fish Fry

Last month when i had tried cooking Pomfret for the first time, it had horribly failed as the skin was peeled off while frying and fish was broken. Though it tasted good but was not so pleasing to eyes :( 
So i was really afraid that if would be able to get that perfect cook. But at the end effort paid off and i am very happy today.



Ingredient's 
2 silver pomfret fish, wash and clean
2tbs red chilly Powder, 1tbs Garam masala , 1/2tbs turmeric, 1/2tbs coriander powder 
1/2tbs Ginger garlic paste 
2tbs lemon juice 
Oil as per required 
Salt as per taste



Cooking Method 
Make a paste of all the masala powder, add salt, lemon, ginger garlic paste, mix it up, Then apply it on the fish both the side (In n out), Keep it in the fridge for 2 to 3hour. Heat up the frying Pan (Tava) add oil, when oil is hot, place the Fish on tava, fry both the side to golden brown 
Garnish and Serve hot with (Drinks, Roti, or as a side dish)

Rohu Fish Fry


Ingredient's
5 to 6 pieces of rohu fish
3 tbsp of red chilly powder, 1tbsp of turmeric, 1tbsp of garam masala
1/2tbsp of ginger garlic paste
2tbsp of lemon juice
5 to 6tbsp of maida
Salt to taste
Oil for deep frying


Cooking Method
Make a paste of all the masala powder, ginger garlic paste, lemon juice and salt, apply it on the fish pieces and set it aside atleast for 1 to 2 hour. Take a deep non sticky pan, put oil and when the oil is hot, dip the fish pieces in the maida and deep fry to golden brown.

Fish Curry


Ingredient's
  • 250 gms fish washed, sliced
  • 1 cup coriander leaves chopped
  • 2 tomatoes finely chopped
  • 8 cloves garlic
  • 2 green chillies chopped
  • 1 tsp methi seeds
  • 1 tsp coriander powder
  • A pinch turmeric powder
  • Salt To Taste
  • Oil as required.
Cooking Method
  • Marinate the fish in salt and turmeric powder for 15 minutes.
  • Shallow fry the fish pieces, drain and keep aside.
  • Grind the coriander leaves, garlic and green chillies. and grind tomato to a smooth paste separately.
  • Heat oil, add masala paste and fry till the oil separates out.
  • Add tomatoes, methi seeds and powder masalas and fry till the oil begins to float on top.
  • Add about 1 cup water. Bring the gravy to a boil.
  • Add the fish slices and cook for 10 minutes.
  • Serve fish curry hot.

Rawa Fish Fry

Very tasty and delicious Rawa Fish Fry influenced by a recipe from Northern karnataka.






Ingredient's
2 pieces of Fish (Any)
1/2 cup rawa
1 & 1/2tbs red chilly Powder
1tbs Garam masala
1/2tbs turmeric, 1/2tbs coriander powder
1/2tbs Ginger garlic paste
2tbs lemon juice
Oil as per required
Salt as per taste

For Garnishing
Coriander leafs
1 onion, lemon
1 green chilly

Cooking Method
Make a paste of all the masala powder, add salt, lemon, ginger garlic paste, mix it up
Then apply it on the fish both the side (In n out), Keep it in the fridge for 1hour
Then sprinkle Rawa on the fish and keep it in the for another 30minutes
Heat up the deep frying Pan add oil, when oil is hot, deep fry the fish to golden brown
Garnish with coriander,onion, lemon and chilly
Serve hot with (Drinks, or as a side dish)

Fish Fry Bangda (Mackerel)

I have chosen Bangda (Mackerel). However the method is the same for any fish.

Ingredient's
4 pieces of Fish (Any)
3tbs red chilly Powder
1tbs Garam masala
1/2tbs turmeric, 1/2tbs coriander powder
1/2tbs Ginger garlic paste
2tbs lemon juice
Oil as per required
Salt as per taste

For Garnishing
Coriander leafs
1 onion
1 lemon
1 red or green chilly

Cooking Method
Make a paste of all the masala powder, add salt, lemon, ginger garlic paste, mix it up
Then apply it on the fish both the side (In n out), Keep it in the fridge for 1hour
Heat up the frying Pan (Tava) add oil, when oil is hot, place the Fish on tava
Fry both the side to golden brown
Garnish with coriander,onion, lemon and chilly
Serve hot with (Drinks, Roti, or as a side dish).
