Okra In Coconut And Tamarind Curry. (Bhindi Ka Khatta Salan)

Okra In Coconut & Tamarind Curry.. This curry is even known as (Bhindi Ka Khatta Salan) in south muslim families.. I had totally forgot about this curry after my marriage. I need to thanks one of my fellow blogger Priya Ranji to remind me about this curry. May be 2 weeks back she had posted this curry on her blog and as usual I was checking out the blog's in the morning and this okra curry catch to my eyes and all the old memories came back... After seeing her post I ran to my kitchen to see whether I have all the ingredients what I need. By luck all the ingredients were there and without wasting time I started cooking..


This use to be one of my favourite curry, I use to take out all the okra from curry and eat it without rice and then lick the curry.. Not to mention I did the same thing even today after I finished cooking...The curry had turn out exactly the way how my mom cooks it tangy and delicious...


Ingredient's.
250gram fresh okra (cut into small pieces)
1/2 cup fresh chopped coconut
2 large tomato, 1 large onion, hand full of chopped coriander leaves
2 cloves, 1/2tsp cumin
2tsp ginger garlic paste
2tsp red chilli powder, 1tsp turmeric, 1tsp coriander powder
1/2 cup tamarind extract (you can use less or more according to your taste)
3tbsp Oil
Salt to taste.

For Tempering.
1/2tsp mustard seeds
10 to 12 curry leaves.


Cooking Method.
In the mixer jar, add the coconut, tomato, onion, coriander leaves, cloves, ginger garlic and cumin, grind it to a smooth paste.
In a deep frying pan, add 2tbsp oil when oil is hot, add the cut okra and fry them till the stickiness is gone. and take out on to the plate and set it aside.
In the same pan, add the left over oil, mustard seeds and curry leaves, when they start spluttering, add the ground masala and red chilli powder, turmeric, coriander powder, and salt, fry them for minute or 2. Then add tamarind extract and fried okra. Give them gentle mix and add 2 cups of water and bring it to boil. Then lower the flame and cook the curry till okra is tender...
Serve hot with Plain Rice or Ragi Ball..

Lady's Finger & Kasoori Meethi Fry (Okra With Dried Fenugreek Leaves Stirfry)

Lady's Finger & Kasoori Meethi Fry. I cook okra twice a week, because it is the most favorite dish in my family and it cooks very fast and saves lot of time.. Adding kasoori meethi to okra it takes the dish out of the world and it is very healthy too. Very simple dish with minimum ingredients...You can serve this with Roti's or as a side dish with rasam rice..
 
 
Ingredient's
250 gram bhindi
2tbsp kasoori meethi
1 onion, 2 green chilly (finely chopped)
1tsp garlic and garlic paste
1/2 tsp turmeic, 1/2tsp coriander powder
1/2tsp cumin seeds
1/2tsp mustard seeds
Oil and Salt as per the taste.
 
 
 
Cooking Method
Cut the okra in to small pieces (Do not add a water on okra keep them dry while cutting)
In a deep frying pan add oil, mustard and cumin seeds, when they splutter, add garlic paste, onion and green chilly, fry to golden brown to lite brown. Then add turmeric, coriander powder stir for 30sec
Now add okra and mix well, Cover the lid and cook till the okra is soften. Then add Salt and Kasoori Meethi and again close the lid and cook for another 3 to 4 minutes.cc
Garnish with coriander leafs
Serve hot with Roti.

Achari Bharwa Bhindi ( Stuffed Lady Finger's)

This recipe goes to my MIL, because i have seen her adding pickle masala in all the veggie's which can be stuffed and cook. First time when i had gone to my MIL's place, she had cooked stuffed bitter gourd and that was tasting awesome with parathas. Then i asked her from where do you buy this masala, she said this masala is home made, that is nothing but a Pickle masala. I told her give me also this pickle so that even i will cook this kind of delicious stuffed veggie's.. She gave me 1 bottle of pickle and i have kept it safely, but that is also getting over i need to tell her about it. This pickle can be stored for more then 1year. I will definitely get this secrete pickle recipe from her and post it to all, so that every body can have a delicious pickle which can last for a long time.. 
This achari bharwa bhindi is very simple to make just because of pickle masala, that has all the ingredients which needs for any stuffed veggie's. Just you need to add onion, green chilli and garlic cloves. And in a couple of minutes your stuffed recipe is ready to eat... 


Ingredient's
10 bhindi (Lady finger)
1 large onion, 1 green chilli, 5 garlic cloves, finely chopped
Pickle masala (any pickle)
Salt and Oil as requires


Cooking Method
Wash the lady’s finger well and dry on a towel until completely dry. Chop the crown off and make slits in each. keep them aside. In a large mixing bowl, add all the above ingredients and make a mixture. Then stuff the prepared mixture into the lady's fingers. In a pan, heat the oil and place all the lady's fingers. Cover and cook on a low flame till the lady's fingers are done (about 15 minutes). Remove the lid and allow to crispen. 
Serve with hot Roti's.

Aaloo Bhindi Sabji (Okra, Lady Finger)

Aaloo Bhindi is Gujju Dish, i learn this recipe from one of my gujrati friend. He adds sugar in to this subji but i dont like sweets much, so i tried without sugar. People who like's to eat sweet food, u can always add sugar in the end after the sabji is completely cooked...;)



Ingredient's
1/2kg Bhindi cut in to small pieces
2 medium size potato cut in to small pieces
1 big onion, 3 green chillies, 4 garlic cloves, 4 stem coriander leafs (Finely Chopped)
1/2tbs turmeric, 1tbs coriander powder
1/2tbs Musturd seeds, 1/2tbs Cinnamon seeds
3 dry red chillies
Salt according to the taste
Oil as per req

Cooking Method
In a deep frying pan add oil, when the oil is hot, add musturd, cinnamon seeds and red chillies, when they splutter, add chopped garlic, saute for 10sec
Then add onion, green chillies, and coriander leafs stir to lite brown
Add turmeric, coriander powder stir for 30sec
Add bhindi, potato and salt mix it well, Cover the lid
Cook it till the potato and bhindi is cooked.
Serve with Chapathi's or Roti.

    Bhindi Stir Fry (Lady finger)

    Now i got a chance to prepare Bhindi fry. After coming to seoul i dint see the bhendi for a long time. Thanks to Nehal (my Husband's friend) for showing me the grocery store which keeps Bhindi. My mom use to make bhindi curry before my marriage, now i am trying to get the taste in my cooking also. Bhindi just taste delicious with roti, it goes inside stomach smoothly that's what i love about bhindi's. hahaha :-)


    Ingredient's
    250 gram bhindi
    1 onion (chopped)
    2 green chilly (chopped)
    1/2tbs garlic paste
    1/2 tbs Turmeic, 1/2tbs coriander powder
    6 dry red chilly (chopped)
    1/2tbs mustard seeds
    Oil and Salt as per the taste.

    Cooking Method
    Cut the bhindi in to bit pieces (Do not add a water on bhindi keep them dry while cutting)
    In a deep frying pan add oil, musturd, and chopped red chilly, when they splutter, add garlic paste, onion and green chilly, stir to lite brown
    Add turmeric, coriander powder stir for 30sec
    Add bhindi, salt mix it well, Cover the lid
    Cook it till the bhindi is cooked.
    Garnish with coriander leafs
    Serve hot with Chapathi's or Roti.
